Morning..... I think!

Have been too busy and am tired and sore (yes, that's a body part you asked about).

Had such a great time, weather was really cool and scenery awesome!!

We have a consolidation issue at work with going from four buildings to two -- increased case loads for everyone!! The board mtg. is tonight and should prove to go on into the wee hours.

Congrats on the new grandkid Linda -- wonderful head of hair!! Beautiful!!

Susan, neat family pictures!! You look great!

Welcome back Barb. I'm sorry about your poor sore tushie. OUCH!
But glad you had a great time anyway.

UGH on the consolidation. Those things are always extremely stressful. How much longer are you going to work?

Ginny, Bummer on working that day shift. It's really difficult to adjust when one is used to working evenings. Hope you don't have to do a double.

I just got an e mail from Robert. It seems that Roger is having some major computer problems and won't be around for a few days. Let's hope it's nothing too serious. I sure will miss him.

Off to let grandpup out and then get to the home improvement store. We really, really need to stain the deck again so I can get out the deck furniture and plant some flowers in the deck pots.

You have to get way into it and you will see this gal, Vickies' garden shots. Lots of eye candy for our souls.
I'm am going to take the awl today and punch some drainage holes in my planters. Next year I am going to put mulch or something light in the bottom of the pot. I did put peat moss in the bottom this year but it must have been to tight.

Sure hope Roger's pc is not up too long in dry dock.

Linda do you stain that deck every year. It seems like I remembering you doing that last year, or was it the year before.
Is Nicholas home yet? Looks like the girls will be old enough to help mom. THey will sure enjoy him until he starts getting into their stuff.

Ginny sure hope you don't have to work 16 hours. That overtime is nice on the check but a killer to do.

Tea Party?????? What are we having Susun?

Montana, I missed your post.
Oh my, sure hope Zip can get the ol puter back on its feet, so to speak.

Farmers Mkt was a bit bare, cold weather kept away lots of vendors and customers. DGBrat got 3 Tom plants, the varieties I use. Bob's cousin was there too, and I steered him to the proper Toms...LOL
GBrat is coming down with (possibly) Loretta's crud....some dizziness and fever, fatigue, so far. She did manage to get in some Brunch.

I got in some good hugs and pets with Burk and Ruby...he gently nibbles on her long ears and bows down to her, "PLAY !" Ruby's former owner dropped off her AKC papers; her sire's name is Sir Charles BARKley....
Ruby's name is Ruby May...too cute.
Darlin' Burk has no papers and we don't give a hoot anyway. Papers wouldn't make him any sweeter/better.

No Thunder yet today...hope it goes away for all of us.

LORETTA, good to see you've improved.
Thanks so much for that Head's Up...WOW, you're right...food for the soul...enjoyed the viewing.
Keep on getting better. Its almost Tea Time at SuSan's.

Loretta, Glad to hear you are getting back to normal. Boy N and V are about the worst things to have. Fortunately it doesn't last too long. Darn these bugs anyway.

No we don't stain the deck every year although we probably should. We were going to do it last year but got lazy.

Shawnee, sorry the farmer's market was a bit bare but at least she got some Toms. What kind do you get?
Oh dear sorry GB is getting that crud too. Some of our patients had it a week or so ago but fortunately I didn't get it, YET.

Bob said Roger thinks it may be a virus or something. My AVG caught one ( Trojan horse) Sunday when I visited a free greeting card site. Never again. Took my scan about 5 hrs to run a deep clean and get rid of it.

Off to enjoy some of this nice weather before the severe storms hit. Some are going to contain dangerous lightening, large hail and up to 70 MPH winds.

edit...Loretta, yes Nicholas is home. They came home yesterday. Don't know how the night went yet or how the girls reacted to him. Best give them a call.

Hi, I'm here TEMPORARILY in all probability. I pulled my ISP software and reloaded it...it MAY have done the trick but now it will have to fiddle with 2 upgrades to the current version.
(I have a hunch something else is going on...but not likely a virus, but it could be!

Chuck was released with 14 days of cephalexin monohydrate and is thrilled he wasn't re-admitted.

I made a boo boo at the ballet last night...after 10 dances in Act one (90 minutes) I went home because about 8 were dull as paint drying...Bob said all 10 in Act 2 were SPECTACULAR. Well you lose some, you lose some more

Sorry about Barb's sore keister, Ginny's sore good worker, Linda's coming sore weather, Shawnee's sore grandbrat, and Loretta's sore throat (but mending).

I'm doing an old fave of mine (made up) sauteed chicken livers, copious onions, pineapple cubes in butter....really good. Maybe a little rice with it.

Worry not if I disappear for awhile...I've gotten most of my saved stuff up to date in case of a needed REFORMAT! (I want to change modems anyway.)

Just wiping the drool of the keyboard.....thank you for the pound cake recipe. It is bookmarked and saved now. I have never made this one. A Victoria Sandwich, is the two halves spread with freshly made jam and thick whipped cream, all legal. Do we have a recipe for jam with splenda? The diabetic will do just fine if not!

As you asked, I should think about the "sandwiches," cucumber and cream cheese, low carb bread, or breadless? The dessert is a "Victorian Sandwich" tweaked by Shawnee! Hot tea with cream served in the finest china and silverwear, the whitest of table cloths with a smattering of lace here and there. Dollies of course, did we mention strawberries and cream.

How was the ballet and Japanese dinner? A close colleague's daughter is auditioning for "Circque de solie" this week. She was with the Winnipeg Ballet for 4 years.
Those chicken livers speak "melt in the mouth" to me! yummy!

well, ZIP...good luck if you must reformat. Hope you are not gone long!! I made some Aglio e olio (?) tonight with LC spaghetti...YUM. Bob had to have meat on the side. Also fresh spinach from the farmer's market, with bacon, basalmic vinegar and whopper green onions...
Geez, we used to go out for champaign brunches just for the chicken livers there.

SuSun, the SF Jams are readily available here. To make one that will be used right away...just crushed fruit, Splenda or DaVinci, a tad of Lemon juice, and a thickener like Xanthan..boil.

However, a nice person on another board took the guesswork out of our project.... ...check this out:

Apricot and Almond Cream Cake

Katy Wheeler

This recipe is based on a traditional British cake called a Victoria Sandwich Cake. Victoria Sandwich Cake is a plain, or yellow, cake which is baked in two pans and then sandwiched together with whipped cream and strawberry jam.

This is my version for low-carbers, which is made with canned apricots instead of jam and ground almonds instead of flour. I challenge any non low-carber to realize that it isn't a regular cake!

Ingredients:
1 cup butter (at room temperature)
2 rounded tablespoons Splenda
5 eggs (at room temperature)
2 cups ground almonds (almond flour)
1 teaspoon baking powder
1 tablespoon lemon juice
1 teaspoon vanilla extract
1 teaspoon almond extract (optional)
1/2 cup heavy cream
5 apricot halves from a can of apricots in water

Directions:
Butter and line two 8-inch round baking pans with baking paper. Preheat the oven to 350 degrees F.

Mix the first seven ingredients (plus almond extract, if using) together in a food processor until smooth. Divide the mixture between the two baking pans, level the tops and bake for about 30 minutes until firm in the center. Remove from the oven and leave on a cooling rack for five minutes before loosening with a knife and turning out onto the racks. Peel off the baking paper and leave to cool completely.

When cooled, whip the cream until fairly thick and "spreadable." Drain the apricots and chop into small chunks, then mix them into the whipped cream. Turn one of the cakes upside down and spread the cream mixture over it (like buttering a piece of bread!) Place the other cake on top of the cream and press lightly to sandwich the cakes together. Serve cut into wedges. Serves 10.

Per serving (one slice): 6.2g carbohydrates; 2.4g fiber; 7.3g protein; 34.7g fat; 355 calories

Cucumber sammies ! Watercress! ( I grew watercress one year, lovely peppery spicey stuff!)
