Just getting this up as nobody is here yet. On my way to bowling and then to craft fair. Weather is a little better today. Not quite as much wind but still raining, raining, raining! WE don't melt though or we'd be water around here. We just grow webb feet. LOL Later.Julie

Hey gang,
Chilly and moist here today. Hope it's a calm night at work, last night they tried to kill me! Thursdays are really getting busy, but I can only do what I can do. Just because they probably think I have a split personality doesn't mean I can drive 2 forklifts at the same time LOL This weather change is starting to get a few old injuries sore, so gotta take care of myself a little better. Luckily they aren't too bad, just some tendonitis etc, but enough to make me think about what I'm doing. Hope all y'all are having a good day. Off to lurk a bit b4 work. L8r

Ginny, sorry your Thrus. are so darn busy. They will try to get as much work out of an employee as is humanly possible. Stand your ground and do what you can. Maybe they will see the need to hire extra help. Julie, Web feet is something we need around her on occasion. Some years it's really WET. Craft fair, eh? Tell us all about it later. Take care of that knee girl. Aerobics may not be good for it. Roger, you didn't tell us what you picked up at Bed, Bath and Beyond, if anything. What's on your wish list? That ferry boat tragedy is getting really complicated. Hopefully they will get to the truth soon. You are fortunate to get the Brit coms during the week. We only get them on Sat. eve. unless PBS is having one of their many fund raisers. Shawnee, I just finished making the cheddar bay biscuits again and added in more pork rinds. Boy are they good. I have this lemon thingy on my mind and found a recipe for a lc pie filling that would make a good sauce thinned down. Have you ever made a ginger bread out of one of the almond flour cakes? I think I'll try it with the above mentioned lemon sauce. Hey Pam, come on girl. Check in and let us know how you are doing. Jackie, you too. Susan, Did you finally cut back on your hrs at work? Bowling went fine and didn't hurt my knee like I was afraid of. It's much better today but still think I'll forget the aerobics. I'm too afraid of it. Like I said, last time I screwed it up, it took months for it to heal. The craft fair was ok. Some of them have way too much crocheted stuff. Not my thing to buy. Going to another one tomorrow. Some years i hit them all. Some really good ones on Thanksg. weekend and next. Looking for ward to those. Oh yeah, one in Tacoma that is huge, over 500 vendors. Fun! Too much goodies to say No to though.
Ginny, hope work goes better today. I hear ya on the ole joints giving us fits. Wait until you're 60! Linda, did you finish the book. I love thrillers but not sure about the stock market. The mention of it gives me tears from losing so much money. Hope you enjoyed it though? Found thes lemon bars if you have liquid splenda. I don't. Nancy's Low Carb Lemon Squares (bar cookies) Crust: 3/4 cup almond flour 1/4 cup oat flour 1 Tbsp flaxmeal 1/2 cup Splenda 1/2 cup softened butter 1/2 teaspoon guar or xanthan gum (optional, just helps hold it together better) Filling: 2 large eggs 1.5 Tbsp Liquid Splenda 1/2 teaspoon baking powder 1/4 teaspoon salt 2 tsp lemon extract Blend crust ingredients and pat into a Pam sprayed 8x8 baking pan. Bake at 350 degrees for about 18 minutes or until very lightly browned and set (not shiny any more). Beat the ingredients for the filling (topping) for about a minute, pour evenly over the pre-baked crust and bake again for about 15-20 minutes or until barely browned and set. Let cool at room temperature, cut into 16 even squares, eat one and cover the rest. Keep cool in the refrigerator. 10 servings (you could make them smaller, of course :-) Carbs: 3.637 Cals: 167.8 Hi to everyone else........Julie Last edited by Jewels60 : 10-17-2003 at 05:24 PM. |

HI to all
Linda about cooking the pancakes on the grill. Well they do look funny with the ridges. Look like fat fingers. But once they are cooked I just cut them up anyway so it is not a big deal. They really cook up nice better than the old Pancake Maker. They are done clear thru. I don't even change the feet to make it level they do just fine as it is. I grill them for about 6 min.I sure hope you are feeling lots better. Julie glad to hear that your knee is not bothering you that much so far. We have a craft show and flea market going on here this weekend. I usually don't even bother to go. Our chruch will be selling candy and I will go up there on Sunday to help and check some of the stuff out. I have enough stuff already. One year I did find some great pork rinds. That recipe for the lemon bars looks good. Think I will copy it. It would be good for a take along dessert. GInny take care there. I remember your tendonitis from a while back. We have a cool down here too. Tonight in the 30s and 40s. But it is going to warm up to the 70s during the day most of the weekend. Boy Shawnee that Bob is a doll to make special adaptions for your cooking needs. I use my grill for the pancakes and hamburgers and that is about it. I did try some fish but it was too dry after the butter slid off of it. How was the zucc lasagna? I added some zucchini to my flaxmeal muffins today. I am waiting to taste them until next week. Got them all frozen up. I have to quite tasting. I sure am on the look out for the cranberries, none yet here. Well Zip no catalog today. But I am set for a while. What are you into out there in N.J.? Have you been able to do a little traveling? Our flu shots will be gotten next week on Wed. One year they ran out of vaccine. Julie, I'm glad you decided against the aerobic class and are protecting your knees.
Thanks for that recipe. No I don't have liquid splenda but can use the packets or Diabetisweet. I need to order some liquid splenda and wheat protein isolate from Trish's co op. The thing that's holding me back is Pay Pal. She uses that and I'm a bit afraid to sign up. Sorry you didn't find anything interesting at the craft show. I like art work but not the crocheted stuff. UGH on the stock market. That's the reason I'm back to work. I really took a beating too. The book is more about terrorist attacks against the entire world's financial instutions by a group of Vietnam vets.. Loretta, LOL I wondered about those pancakes. I thoought maybe you had a smooth surfaced Forman. 6 minutes, eh? I may give it a try. I am feeling better, thanks. Still have a nasty cough though. Off to watch Philadelphia on Bravo. Hi Guys,
Just checking in! Better late than never! It is certainly Fall up here, cooler, leaves everywhere, losing the colour of late! DH comes home tomorrow, to a much cooler temp than he has been experiencing down there! Long day at the office, only one more full day scheduled on Oct 31st, then free, just down to the groups. It's tempting to go in for the odd day but I want to think in another direction not sure if the ole bills will permit me? Roger, The anit-inflammatory I took was DH's Mobicox I take that for a couple of days and that seems to fix me up, along with those back exercises on the floor. You have quite the line up of Shows..Enjoy! I think we get the Flu Shot at work next week. Gotta check so I'll have to go in. Loretta, Yes, I have cut down on my equipment, getting to travel lighter and lighter. Have to make several trips back and forth and one place I have 13 stairs to climb too!
