Way of Eating and Oxygen

I came across this this morning. Does anyone know anything about this:
" A diet high in complex carbohydrates - such as fruits, vegetables, whole grains and legumes - significantly improves the blood's ability to transport oxygen to cells. A high-fat diet does the opposite - it reduces the blood's oxygen-carrying capacity."

If you let me know the citation for the peer-reviewed scientific study that this was quoted from I woud be happy to look into this assertation further.

It is an ad for portable O2, and with my respiratory problems, I use O2.
If I can increase O2 intake somehow, it would sure help, but the weight loss
is a definite help.

Well, the source you linked to is an advertisement, and I don't see any citation for their assertation. So you may want to email them and ask them for citations for that. There are a lot of factors that affect the blood's oxygen carrying ability. I could agree if they recomended meats such as red meat and chicken thighs which contain a lot of iron-rich myoglobin. But I can only imagine that they are making leaps beyond science to make a direct correlation between the foods listed and oxygen-carrying ability of the blood.

Here is a scientific book on oxygen transport. It is fairly technical, but gives an overview of factors that come into play when looking at tissue oxygenation, which is the ulitmate goal. http://www.ncbi.nlm.nih.gov/books/NBK54104/
