It's FRIDAY! What's on your menu?

B: coffee w/1/2&1/2; chocolate mug cake
L: small ribeye; salad w/evoo
D: ham; coleslaw

Mug Cake recipe:
Ingredients Calories Carbs Fiber Protein Fat Sodium
1 Eggs - Egglands Best - Large
2T Hershey's - Cocoa Special Dark Powder
2T canned pumpkin puree
sweetener to taste (I used 6 drops stevia)
pinch Baking Powder
pinch Salt
2-4T Almond Breeze - Unsweetened Almond Milk

Beat the egg in a large mug. Add everything except the almond milk, mix well with a fork. Stir in the almond milk until smooth.
I microwaved this for 2 1/2 minutes on high. Result was a moist, but cooked, chocolate cake.

Total for entire recipe: 98 calories; 9g carbs; 5g fiber; 9g protein; 6g fat; 391mg sodium
I topped with a little butter and a sprinkle of natural mate stevia/E sweetener.

B: coffee with hwc/stevia @ 7 ; breakfast sandwich (without the English muffin) of fried egg, cheese, bacon, slice of red onion, tomato, spinach leaves and srirachi sauce @ 10.
S: pork rinds & edamame hummus
L: 2 boiled eggs
D: pork belly and a salad

Dottie, that Mug Cake sounds divine!

B: coffee with cream and splenda
L: diet ginger ale, sparkling water
D: chicken and mushrooms sauteed in a tomato cream sauce, sauteed vegetables, salad, glass of white wine

I had a bacon, zucchini, mushroom scramble for breakfast
lettuce wraps with turkey cheese avocado for lunch
went out to Mexican for dinner and had grilled chicken with grilled onions and mushrooms with sour cream and guac on the side - SO yummy.
