It's WEDNESDAY! What's on the menu?

B: coffee w/cream
L: tilapia curry (tialpia, coconut milk, curry spices, chopped cabbage, green onions)
D: nomnompaleo "damn fine chicken"; avocado and lettuce salad drizzled with evoo

Snack not counted: a low-carb tortilla or pita toasted into chips and sprinkled with salt and vinegar seasoning (60 cals, 10g carbs; 6g fiber)

Totals: 1,201 calories; 21g carbs; 9g fiber; 90g protein; 84g fat

Doing well and continuing to lose. I'm a little worried about my 40th birthday on Saturday. My boyfriend has a surprise planned, which will undoubtably involve dinner and I don't want to lose my progress. For today:

B: Black tea with 2 Stevia and HWC
L1: Salmon patty; balsamic roasted cherry tomatoes
L2: Deli turkey with yellow mustard and cottage cheese
S: 1 oz. gouda cheese
D: Going to dinner and the outdoor movies with boyfriend (will resist the popcorn!!), so probably: spicy tuna with avocado and caviar; seaweed salad.

L: crack slaw

S: can't imagine...but I have a cheddar stick or some marcona rosemary almonds if needed

D: going out - so the usual (wings or a salad of some kind)

I made bacon mayonnaise today

1/2 cup bacon fat and 1/2 cup light olive oil.
Turned out great.
A little looser than usual right as it was made, but it firmed up in the refrigerator.
I did a bit of research and you don't want to use more than 1/2 animal fat or it breaks. Something about the shape of the molecules versus olive or other plant oils.

The chicken: I would marinate it overnight; also there's a lot of salty ingredients, so I'd not add salt for the marinade and just add it as a finish (shave a little of the sodium bomb that it is); on the same note, there's a lot of savory/salty and nothing to balance it. I'd add some sweetener and maybe a little more acid (vinegar) to help balance it.
It was really good "as is", don't get me wrong, and I recommend trying it by the recipe first time
