Chicken fat

Is awesome. I use it to sauté-well-everything. I've saved bacon fat for years, I can't believe it took me so long to get around to chicken fat.

Schmaltz is yummy, but bacon fat is healthier, believe it or not. Chicken fat has a pretty high ratio of inflammatory omega six. So a little here or there is fine, but use the bacon fat (or coconut oil) more. Both are best if you can get them from pastured animals (higher omega 3).

I can't use bacon fat for religious reasons, so I enjoy schmaltz here or there, but not too much.

Thanks for the info-I had no idea! I usually just eat what's rendered off of four chicken thighs a week-gotta have my chicken and hot sauce, and eggs fried in chicken fat the next morning. It's maybe three tablespoons a week? I hope that's all right, because it is certainly tasty! I know that this is blasphemy, but eggs fried in bacon grease just don't measure up.....

Of course, recently I've just been having BPC in the morning....but pork steaks fried in chicken fat are pretty tasty for dinner!
