Confession! I love iceberg lettuce.

It's a dietary transgression to be sure, but as much as I can appreciate a good spinach or spring green salad, I have a deep and abiding love for the wet crunch and crispness of iceberg lettuce. Even the pre-bagged mixes, where they have to add cabbage and carrots to get a shred of nutritional value

I made myself a chicken salad with slivered almonds and a rice vinegar and sesame oil vinaigrette for lunch. It was SO refreshing over that yummy iceberg, and so very light and filling. I like nutritionally dense veggies, but it's like my dirty little secret that I'd pick a bed of iceberg for almost any salad I'd put together, given the choice.

Why is it a dietary transgression? You mean b/c it doesn't have many nutrients? I was like, are we kicking ourselves for lettuce now?!

Yes, it's not very nutritionally dense. And my own diet generally focuses on the quality of nutrients, as much as the macros. But watercress and arugula just doesn't hit the spot like iceberg does. I'm dealing with nutritional purity guilt

I know it is nonsense and there is nothing wrong with iceberg, even if it isn't the best choice for the calories of the lettuces, but even knowing this I still have to acknowledge that subtle voice in my head shaming me for not choosing a better quality ingredient. I think we're all vulnerable to this, especislly those who've been sticking around the diet and health sphere awhile. But darn it, there is NO shame in iceberg. I REFUSE TO BE SHAMED BY A SALAD! It was YUMMY.

Iceberg lettuce is still a damn vegetable! Go Team Iceberg!

(I'm too lazy to cut up real lettuce most of the time, iceberg is easy to cut and wash and is so wonderfully crunchy)

Sometimes my favorite thing in the world is a "wedge" salad. Cut a big wedge of iceberg lettuce, top it with blue cheese dressing, sprinkle with bacon (turkey bacon in my case). Especially on a hot summer day, this is the best!

I went to high school in Salinas California, where much of the nation's iceberg lettuce is grown, the fields were literally next door to my house. My one word of caution for a pregnant lady is to look for ORGANIC iceberg lettuce if you can. The conventionally grown is LOADED with pesticides. It is worth the extra money, I promise. Seriously!

Great post!! Ha ha....so funny how you feel guilty!! I think it's awesome to point out all the GOOD things about eating low carb. I was just thinking how I am so over needing a bun for anything that I actually PREFER eating my cheeseburgers ON lettuce only now.
I crave them like that actually.

OMG I love the ice berg wedge salads too - I get so excited when I see it on any menu, especially when they use REAL blue cheese crumbles and not just the dressing. MMmmm

The wedge is one of my favorite salads to get at a restaurant. Drizzled with blue cheese, bacon, and bits of chopped hard-boiled egg with a piece of rare salmon on the side. The crunch factor really makes the dish. Yum!

This thread warms my heart. Another Iceberg lover here. In fact, just today I had a BLT. I put the iceberg lettuce on a plate and spread some mayo on it and put bacon and cut up tomatoes on it. Yum! I also use it as a bed for my chicken salad. I will never give up my Iceberg!

I like all kinds of lettuces and eat a lot of different kinds of salads, so lettuce is sort of like my "pasta"---- all different shapes, colors and sizes of lettuce, depending on what I'm putting on it.

But oh yeah, I love ice berg lettuce too. Love the iceberg wedge salad, and love it with tuna salad on top with a sprinkling of black olives and scallion onions and a good homemade vinegarette. And imo, there is NO better lettuce to put on a sandwich. Don't have those often, but do have them occasionally on LC breads, and you can't beat that crunch for a sandy, specially a BLT with to me isn't a BLT w/out ice berg lettuce.

Yup, love wedges. I am one of those mamas who can't bear to abstain from blue cheese during pregnancy, so I spin the roulette wheel on it and enjoy every bite. Mm!

I spent some time religiously eating only baby spinach, spring mix, and green-leaf lettuce. Then I decided to heck with that! I love iceberg, no ifs ands or buts and if I love it I shall eat it. I get plenty of nutrients with my food choices.

Eating iceberg is like chewing icewater for me, and I do love my water.

I love the iceberg wedge salad at some places! Love them. Outback has one too now!

I love iceberg in the summer, or as a burger "wrap" better than romaine.
I love romaine for heavy dressings, like mayo based ones.

I had the best non-wedge wedge salad the other night at a new barbecue place. O.M.G. It was sooo good. Instead of cutting it in a wedge, they cut a thick slab from the head of lettuce and laid it flat on the plate. Covered with blue cheese dressing, blue cheese crumbles, diced tomato, and candied bacon (not low carb, but YUM!). I've been seriously wanting another one every day since. I think having the round "wedge" left more nooks and crannies for the dressing to slip into. It wasn't drowning or anything, but had a great mix of flavors in every single bite.

This is brilliant! My only complaint w/wedge salads is that you tend to eat all the good stuff first and be left w/a lot of lettuce. I can totally see how the flat slice would allow the dressing to soak into ALL the lettuce more, and how the flat nature of it would allow you to more evenly eat the goodies.

Also, just to note, you CAN make caramelized bacon w/a sweetener, for those looking to do this at home.
