Good morning to all! I had to share - I made one of the recipes last night that I found on here; Sausage and egg Frittata - -OMG - it was DELICIOUS! MY bf and his son and grandkids had some too [they are definitely not LC people!!] and they all liked it - a lot! How surprised was I! BF is basically a meat and potatoes guy, but liked this!!! The leftover piece was my breakfast. I'm going to try the General Tso's chicken tonight - AND the best news is that I'm back down 3 pounds - YAY!!! Thanks for the recipes and the encouragement you guys are giving me!!!!!!!!

Just had lunch - I figured, if I write down what I'm eating, as per the title, , I'm more apt to 'behave' since others are seeing it too - - don't know - - see if it works - anyway - As I said in last post, breakfast was leftover sausage/egg frittata, lunch was a nice salad wi leaf lettuce, celery, turkey bacon bits, hard boiled egg, shredded chdr cheese and lite ranch dressing AND a cup of tomato soup (there again, I found a recipe on here - since I can/jar our own tomatoes, I had 'tomato soup' jarred already - just added the cream, a jennie-o turkey hot dog and some shredded chdr cheese - -YUMMY!!!! [and full too!}] Not sure what Im going to have with the General Tso chicken tonight - other than a salad. Oh, I also tried someone's suggestion to freeze Reddi Whip to make it like soft ice cream - I did it - - it's great - serves it purpose - and I only need a few spoonfuls to satisfy the urge for ice cream. Maybe a walk now [with my umbrella - raining here in upstate NY] Later gators . .

Welcome Lukoala! I find that if I plan my days menu, I don't get caught without the food that I should be eating. I started this habit 4.5 years ago and I think it has saved me many situations where I might not have adhered to my plan as well as I have. This thread is not to judge what others are eating and you will only get a comment if you ask (other than something positive, like that sounds amazing)! Hope you continue to join us!

B: omelet - I call it the four-hour omelet because it lasts me four hours!

L: Tomato/veggie soup - I am making my own veggie/tomatosoup...very low-carb and adding 1/4 cup of tomato soup from Costco (thickens it big time) and cup-up chicken! SO DELISH!

D: One taco. Found great LC tortillas. They are pretty thin, but tasty and work fine. Will add hamburger, cheese, little tomato, sour cream, salsa.

Snack: 1/3 c Greek yogurt, 2 T. oat bran, one large strawberry, one stevia packet

I want to figure out carb count.

I may eat more, but hope not!

Say, I am starting a challenge for Newbies and others. It is under that "Challenges" category. I sure have learned a lot from this thread and would welcome (love!) any of you to join. There are lots of "volunteer" positions. I really need people that will share their knowledge and answer questions and be a support. I think (hope) it will be an encouragement to all who join. It is just for one month. Starts April 1st. Read up on if you are interested. We will not post what we are eating every day, so plan to stay on this thread also.
