Mini-Meal Ideas

Hi all,
I'm looking for some mini-meal ideas. I'm a busy RN and work 12-hr shifts. I think I'll try packing 3 or 4 to last my shift and keep me satisfied and from wanting all the chocolate and junk food at the Nurses' Station. So far I'm thinking:

1. MIM's
2. Cherry tomatoes with 1oz cheddar
3. Tuna Salad in lettuce wraps

I enjoy a 1/4 dill pickle with a stick of cheese, wrapped in some ham. boiled eggs are also an easy idea if you can keep them cool.

Hi Reddress...

I sometimes put a strip of cream cheese in it instead of hard cheese...and sometimes a stripe of hot mustard.

WOE: low carb - 1400 calories
For my 12 hour night shifts I might bring l/2 cup cottage cheese, a couple of celery stalks with peanut butter or chive and onion cream cheese, almonds and my bag of "chips" (my favorite dill pickles sliced). Sometimes I bring a low carb bagel with cheese.

Thanks guys! I'm about to head to work and this is what I've packed:

100 grams cherry tomatoes with 1oz cheddar, sliced up
3x stalks (weighed 5 1/2 oz) celery with just a touch of PB in the middle
2x MIM's premixed, in covered glass containers and ready for the microwave
1x pouch tuna with mayo (if I need it!)

I think I should be OK at work tonight! I'm going to attempt to start induction again, this is my first day. I hope this is all OK for induction - I have bought and lost the book like 3 times and refuse to buy another one

I forgot about cottage cheese, will have to pick some up!

Pork Rinds are always AWESOME -- and zero carbs (double check nutritional label if it's seasoned) but 160 kcals per oz -- if you're also watching your caloric intake.

What's MIM? (Is there an Acronym Dictionary somewhere in here?...LOL)

Which version of Atkins are you following? That would give us a better idea on how to help you with this... (In A'72 a lot of your food choices are not Induction.)

Just Jo,
MIM= Muffin in a Minute (flax meal, baking powder, stevia, egg, coconut oil, cinnamon and cocoa powder). Wow! You have sure been successful on Atkins! What do YOU eat!? You're at my goal weight! I had been following the Dr. Atkins' New Diet Revolution. What did I do wrong, LOL. I guess i need to review some online resources. It occurred to me that PB probably wasn't on the list. But what else?

Sometimes I put spreadable cream cheese on the meat with the pickle and cheddar, lol!!

No PB, or cottage cheese on Induction

Cherry tomatoes are pretty carby, too. I *love* them and count them as 1g carb each when I (frequently) eat them.

I'll be graduating from a RN program in May! When I go in for 12 hour clinical/precepting shifts, I've found eating a BIG breakfast (2 egg omlette with bacon and cheddar) helps to keep me going until it's time for lunch. I always keep almonds handy just in case of a snack attack (nuts are NOT induction friendly)

If you like your food choices and are doing well, maybe you could forgo the induction food restrictions and just stick to the carb limit. Anyway, another small meal idea is chicken wings and dipping sauce that you could eat cold or heated.
