I want to eat sandwiches.

But every time I try out a low-carb "bread," I realize whatever I'm eating would be way better just wrapped in lettuce, then I stop trying. I found a great homemade mayo recipe and now I want to have fun with my mayo.

Has anyone ever found or made a gluten/grain-free "bread" that has some give to it; and doesn't crumble or fall apart in their hands?

There is no recipe at those sites I could see. There may be one in the recipe section here, along with oopsie rolls and floopsie rolls, and the various one minute muffins...
Linda's low carb site has a coconut bread recipe.

That one looks so good. Its all about texture, not taste; for me. My Paleo teen awhile back was making coconut flour pancakes, and I do remember them having a better bread texture than almond recipes.

The almond bread recipe here at LCF is well received by my family (see especially Barbo's posts #65 and her gluten-free onion/caraway version at #147).

As you'll see elsewhere in that thread, it's been used to make hamburger buns, bagels, doughnuts and lots of good, robust, baked goods.

The foccacia bread recipe in the recipe forum created by Buttoni is hands down the best lc breat I have ever had, and does not require a lot of crazy ingredients. You can make it savory or sweet, and it holds up to grilling or toasting. It is also really good pizza crust. I dont do a lot of other lc baking, and keep all the ingredients on hand so I can always have that bread.

Oopsies have saved me on this WOE!
The first time I made them I used a Baconator like Cleo had them pictured on her blog and I've not thought twice about regular ol ' bread since.

This is as close to real bread that I've ever made on LC (I love it):
Two Minute Bread
Mix together:
1T butter, melted
1 large egg
1 T Parmesan cheese
1 1/2 T fiber powder
(found near fiber in pharmacy and the label says it is used for cooking)
2 T flax meal (grind flax seed in high speed blender)
1/4 tsp baking powder
1/4 tsp sugar substitute
Pinch of salt

After mixing all this together, spray with no-stick spray, a bread-slice-size plastic storage container or glass dish. Pour in mixture. Microwave 2 minutes. Turn out on a plate and let cool one minute. Toast in the toaster.

I miss the ease and simplicity of sandwiches for lunch. My wife made one of the flax seed bread recipes, and told me it was terrible. I never tried it.

Kahuna - sandwiches are still simple - make the same as normal but sub in lettuce. I occasionally crave bread, but by and large I don't miss it and haven't made analogs more than a few times in as many years. Once you get used to it is it great.

Yeah, I ordered a low-carb burger from Back-Yard burger yesterday when I was out at lunchtime. I've never been a big fan of lettuce, but I figure I wouldn't eat the bun by itself, it's just there to keep your hands dry when eating the sandwich!

It was good...I guess it's something I can get used to.

I certainly do... The second recipe is more like a nice wholewheat type bread in flavour.

I haven't calculated the numbers, I can't seem to get on to my preferred counting website/tool.

'wholewheat' seed bread for allergics, inspired by Maria Emmerich

Ingredients:

1 cup blanched almond flour
1 cup ground almonds
1 cup flax meal
90 grams psyllium husk powder
1/4 cup cracked flaxseeds, brown
1/4 cup sunflower seeds
1/4 cup pumpkin seeds
1 tsp baking soda, aluminium free
2 tsp cream of tartar
1 tsp celtic sea salt, fine
5 TB ACV
7 egg whites
2 TB lightly roasted macadamia nut oil, or another oil of your choice
1 3/4 cup boiling water

Preheat oven (upper/lower heat setting) to 350 degrees Fahrenheit/ 175 degrees Celsius.

Mix all dry ingredients apart from the seeds well. Add the seeds, mix well again. Then with a kitchen machine with the dough appliance (I used a handheld mixer with my dough hooks) add the egg whites, the vinegar and the oil and knead well until mixed. You should have crumbs. Then boil the water and pour it in the bowl immediately and knead until sticky and well mixed. Divide the dough into two, and fill two medium sized bread tins (I use silicone ones) with the dough. The tins are up to 1/3 to 1/2 full. Bake in the oven for 1 hour and 40 minutes. Take the bread from the tins and set on the rack with the oven off and the door open for 10 to 20 minutes to dry out completely. Then move bread to a cooling rack and cut when cooled off into medium slices. Freeze those that you are not going to eat, and keep the rest in the fridge.

It is reminiscent of a wholewheat seed bread and is very filling. I would say two medium thin slices would be a serving. I got 16 slices per loaf.

I've made a few and I like Elena's Pantry paleo bread. I thought it was easy to make, didn't have a lot of crazy/specialty ingredients, sliced well, and had a nice texture (not crumbly). I bet you could substitute cashew meal for a less "sweet" flavor. Probably leave out (or reduce/replace) the honey for LC. I can't have dairy or gluten, so this was a good recipe for me.

Paleo Bread

2 cups blanched almond flour
2 tablespoons coconut flour
¼ cup golden flaxmeal
¼ teaspoon celtic sea salt
½ teaspoon baking soda
5 eggs
1 tablespoon coconut oil
1 tablespoon honey
1 tablespoon apple cider vinegar

1.Place almond flour, coconut flour, flax, salt and baking soda in a food processor
2.Pulse ingredients together
3.Pulse in eggs, oil, honey and vinegar
4.Pour batter into a greased 7.5 x 3.5 magic line loaf pan
5.Bake at 350° for 30 minutes
6.Cool in the pan for 2 hours
7.Serve

Ilike Maria's breads... but my go to for white bread cosistency is the oopsie made with mayo instead of cream cheese...I add a tbs of flax and a tbs of protein powder per 3 egg batch and when I eat them I cut them in half and turn them inside out so the bread looking aspect is toward the outside...this is goood for grilling cheese or for a bready looking sandwich.
you have to pile them nice and high before baking to make them thick enough to cut in half so don't be stingy when making them.

I remember the oopsies but never made them. I may want to give them a try. The "bread" I may eat has to have no grains or sugars, so, the only one I have ever made is the flaxseed one minute muffin. I have made it in a round bowl, and in a square Corningware. I have used it to make for a breakfast muffin, a chocolate "cake" to take my own treat to a baby shower, to make a BLT, and to slip a fat, juicy cheeseburger into. I like the way I can make it sweet and savory. It has saved me and made me feel included in enjoying certain food specialties the way others do.

I am a big fan of the oopsie rolls. They make great sandwiches and are so much lower in calories than any of the breads made with the nuts. Unfortunately, I do have to also watch calories so this is a major factor for me. I think the oopsies hold up really well with hamburgers and other types of sandwiches.

Last night, I bought some low carb soft taco/tortilla shells. They have 6 net carbs per. I used them for "burritos" tonight. And I think I'll try making a wrap or sandwich with them tomorrow. Might even try to crisp them up and make "pizzas" out of them.

Well, I tried one recipe with 8oz parmesan and a cup of almond flour with one egg. It came out as a cheese cracker! My teen girls loved it but I was dumbfounded because I followed the recipe to a tee, but it was totally, in all ways, a cheese cracker. It was crispy and flaked like a cracker does. Weird.

So I bought zanthan gum to try an amazing looking coconut flour bread, and I will finally try the oopsie, but the egg white folding looks complicated however I will try it anyway. This is my new project!

I made a wonderful bread! Coconut flour, parmesan, egg, olive oil, diluted hwc, salt, sweetener, baking powder and xanthan gum. Looks, tastes, and holds up like white bread with the slight "chew" of gluten. Won. Der. Ful!!! I made a huge batch and my girls kept eating it. I had to tell them to stop it came from a link ella5 had up earlier: if we can't link it I would be happy to write it out in the recipe room if anyone wants it

Man, sometimes I want to eat sandwiches too, roast beef with swiss. And I want to wrap the world up in a hot tortilla with a side of queso and chips. It's gonna have to wait for now though.
