I always have 1 whole egg and 2 extra yolks scrambled up wit 1 Tbl butter, every morning.

Usually only eat eggs on the weekend, but now I've started my diet back up eating 3-4 per day. I love hard boiled eggs. Interesting about the inflammation, my hubby was diagnosed with it a few years back and the Dr told us that eggs were a great food to eat.

I don't eat eggs every day - but sometimes I get on kicks by adding them to shakes, or when making omelets & deviled eggs. In that case, about 4 a day.
