Eggs are my 'go to' when I just don't feel like spending much time on cooking...but then I love them so I never get tired of them. Hard boiled, omelets, over medium, deviled...you name it and I'll eat it. So most days it's around at least 4 but sometimes around 7-8.

Have you repeated the blood test now that you have cut out the eggs?
No I've never had another blood test for inflammation since I cut out the eggs.
I've also found that reducing tomato & peppers help.
Since I've changed my diet to Low Carb I feel a lot healthier, cutting out the eggs was hard though as they were a nice easy breakfast.

Cutting out eggs, tomatoes, peppers (nightshades) is pretty much the Paleo Auto-Immune protocol exactly (along with grains, dairy, etc.)

Thanks for the information. I didn't know my way of eating had a name.
Most of my experience relating to this information has been got from this wonderful forum.

This. People seem to fret over eating 3 eggs at one meal, two at the next, when actually that isn't much different than eating a few pieces of chicken. I think we've had such a fear of eggs drilled into us it is hard to escape. If you find them satisfying, don't fret. They are wonderful sources of vitamin E (which is great for us ladies, especially those with hormonal issues) as well as protein and healthy fats.

Most days 2 eggs, but it's been anywhere from 0 to 8 in a day.

They are the perfect food, and if you like them, I say eat them!

I eat 6 to 8 eggs every day. I usually do an hour of cardio on the exercise bike and treadmill, or on my mountain bike when the weather is nice. Then, I'll have a brunch of over medium or scrambled eggs. I cook them in coconut oil. I'll lift weights about an hour later, 3 times per week.

If I have some left over steak, then it's steak and 4 or 5 eggs. Absolutely wonderful!

I'm retired now, but when I worked, I took 6 hard boiled eggs to work almost every day. Sometimes I got a little tired of them. But, I never got hungry during the day. I went from 240+ pounds to the low 170s over a period of a few years. I've gained muscle and lost fat. That's been a powerful incentive to stay with it.

BTW, I get a yearly checkup. My heart attack risk is off the charts; in a good way!

I enjoy eggs but not sure they love me back I am trying to experiment and see what was causing some allergy/inflammation with me.

I really dont like the yolks... but I force myself to eat them for the nutrition.

Anyhow, moving towards a more vegetarian or at least pescatarian approach I think... eggs would be great as a staple.

Never counted them but I'd say between 0-3. I don't think you have to have them or limit them.

I rarely eat eggs. I will use them in recipes sometimes but I rarely just eat an egg. It isn't that I dislike them or anything. I just like other things better.

WOE: Atkins - it's a diet
4-5 almost every day for my 1st meal.

As many as 10 if I am eating eggs for both my meals. I prepare them differently - eggs with bacon, then deviled eggs with butter and spices.

I was curious about the egg count too. Thanks for bringing this up for discussion. I always eat two scrambled eggs with bacon bits and sausage bits for breakfast. I have been eating 2 pickled eggs for morning snack but that's not every day. I eat at least two eggs minimum per day but most days of the week I eat 4 eggs per day.
This is my first week on low carb - I started 2/25/2014 and I've already lost 9 lbs!!! I love this forum - I really need the support.

I really vary in my egg consumption too and can't say how many per day. I can say that I always keep at very minimum, 1 dozen in the fridge because I can blow through that very easily. Wish I could have chickens!

I love eggs, too. Never tire of them.
My staple breakfast, sometimes with a bit of sausage or bacon.
I was snowed in my house this weekend and ran out of eggs . . . couldn't wait to restock.

I eat from 1 - 4 per day.

I usually make a 3 egg omelette each morning. There have been a couple of mornings where I cooked 4 eggs, I was hungry!

But almost 2 months in, I'm already sick of eggs.
