It's FRIDAY! What Are You Eating Today?

Morning all. Feeling really rough with this stupid tonsillitis, thank god it’s Friday!

Brekky: Atkins milk chocolate shake.

Lunch: Salmon fillet with lettuce, cucumber and garlic mayo plus a Powerade Zero.

Dinner: Pulled pork with lettuce, cheese, avocado and soured cream.

Snack if needed: 50g peanuts.

Plus lots of water and a Berocca.

Plenty of plain, ice cold water in my trusty 24 oz. tumblr cup (usually 5 a day)

Note: This meatball stew is the newest meal in my 'arsenal' for this LC WOE. I was skeptic and leery of it at first b/c I didn't know how my body would react to it being thrown into my diet (perhaps I would gain from eating it). But, with 3 days of continued losses I think it is a keeper.

Second snow day in a row here-and there hasn't been one for 5 years! I've got the day off and we are going to go enjoy the 2 feet of fresh powder! As much as one can enjoy snow-plowing down the hill with a two year old

B- 2 eggs cooked in 1T. butter, 4 slices of bacon
L- salad with lettuce, cucumbers, sliced olives, ranch dressing, 3 oz. hamburger
D- Grilled tilapia, sauteed spinach with olive oil, garlic topped with cheese

Scale bouncing up and down, drinking more today! - Usually if I eat my salad and 1 vegetable for lunch and dinner, the scale does better for me. I felt hungry yesterday and realized that I did not eat any vegetables.

*Armour frozen meatballs (as many as you want)
*Half a can of kitchen cut green beans
*1 small can of mushrooms

Add salsa, meatballs and chicken broth to crockpot. Stir and mix well. Add green beans and mushrooms. Stir and mix well. Keeping the crockpot on low, cook for 3-4hrs. Let stew cool before eating.

This was just something I threw together after reading various kinds of "stews" and crockpot recipes. It works for me. Maybe someone else will enjoy it.
