It's WEDNESDAY! What Are You Eating Today?

Thought little man was on the mend but we're back home again. Hopefully plenty or rest and Disney will do him good!

Brekky: Cafe caramel Atkins shake.

Lunch: A few bites of Mexican chili chicken dipped in soured cream plus a flaked salmon fillet, romaine and a few cherry tomatoes.

Dinner: Half a lemon and herb peri peri chicken from Nando's.

Snacks if needed: Deviled eggs, 50g peanuts.

Plus lots of water, a green tea and a Diet Coke.

Do you ever have days where you are sooooo excited to eat what you have planned? LOL! Today is one of those days for me.

B - coffee with 1 tbs cream
L - 3 oz pork chops, 1 serving mashed cauli (LindaSue), 1 tbs butter, 2.5 tbs mayo
D - 2 cups chicken bacon crock pot chowder (from Peace Love and Low Carb), 1 oopsie roll grilled cheese (1oz cheddar)
S - 4 Trader Joe's Olives

Calories - 1339, Fat - 113, Carbs - 15, Protein - 66, Fiber -4

YES! I totally know what it's like to be excited about what your gonna eat for the day. Unfortunately for me, today is not one of those days. Ha ha. Only because I had almost identical food yesterday. It's okay. Toward end of month we have to scrounge a little bit.

Oopsie grilled cheese? Tinamanni, tell me more!!! How do you make them? You cut open an oopsie and then add cheese and grill?

B: Earl grey tea with 1 half-and-half, 2 splenda
L1: Steak with an anchovy/walnut sauce (sounds odd, but very delicious. From Dana Carpenter's book); grilled yellow peppers; cauliflower bake
L2: Raw baby spinach with full-fat greek yogurt and garlic dressing
S: 10 g. dried pumpkin
D: Probably going to a concert with boyfriend, so will eat out. Not sure where yet, but staying on plan!

So - often I will use 2 oopsies with the tops on the inside and the bottoms for the outside and grill them up like a regular grilled cheese. Today I will be using one and slicing it in half. I'll post a pic

I made this casserole by frying 8 oz chopped mushrooms, a little chopped onion, a clove of garlic and 18 oz ground beef until cooked. Add 6 oz of chopped tomato. Add spices of choice. I added paprika, pepper, salt and dried majoram. Then add 8 oz cream cheese and a little red wine. Leave to simmer.

Decided on Thai food for tonight, so I'm thinking of a chicken lemongrass soup with mushrooms and hot and sour broth to keep out the chill!

An oopsie grilled cheese made from 1 oosie cut in half with 1 oz cheese in the middle. I put the cut side of the oopsie on the outside and put some butter on it and fry
