To Ntombi

I just wanted to THANK you for the recipe you posted for your jalepeno poppers. There are many recipes out there, but yours are supreme IMO. I brought them to a pot luck dinner party last night and they totally saved me from indulging in carby crap (not to mention that they were the most popular dish). The recipes you, cleo, and Linda have posted have made this WOE totally sustainable for me. Thanks, again!
BTW - I adore your avi. You're looking mah-velous, dahling!

Oh, I'm glad you love them! Thanks for letting me know! I just put my own spin on what other people have done and pass it on. I admit the poppers are a real favorite of mine.

And have I already told you that I love your username? Pulchritudinous is one of my favorite words, and I feel like I tell you that every time we interact.

Sure. Feeling lazy, so I'm quoting myself.

Split jalapeños in half lengthwise, remove as much or as little of the ribs and seeds as you like (more removal means milder poppers).

I mix cream cheese with shredded cheeses (I like using different cheddars), paprika, liquid smoke, and lots of garlic. I also add minced habarero to the mix. Stuff into the jalapeños.

Cut bacon in half lengthwise, and wrap one half slice around each half jalapeño, making sure the last bit is at the bottom. Bake at 400* until the bacon is cooked.

The habaneros are optional, of course. They add more heat and also a bit of fruity sweetness, which plays well with the creamy filling and (relatively) mild jalapeños. If you're not a big one for spice, leave them out. When I made poppers last night, I was out of habaneros and they were still absolutely delicious.

Ntombi, Pulchritudinous has been one of my favorite words since I was a young girl. I was an English major before I switched to Nursing.

Lady KT, you *must* make these. They'll surely be the first thing gone!
Protip: I found that nuking the bacon for a couple of minutes (so it's a bit cooked, but still pliable) aids in ensuring that the end result is a crispy, melty, delectable piece of LC heaven.
