The average mouse has about 30 calories

A serving of squirrel has about 120.

A cat needs about 200 calories a day, so he'd better go catch a few more mice. I saw a cat walking home, dangling a mouse from it's mouth. I hope it shares it with the kittens I saw.

Roasted Field Mice:
Skin and eviscerate field mice. Skewer them and roast over an open fire or coals.

Mice in Cream:
Skin, gut and wash some fat mice without removing their heads. Cover them in a pot with ethyl alcohol and marinate 2 hours. Cut a piece of salt pork or sowbelly into small dice and cook it slowly to extract the fat. Drain the mice, dredge them thoroughly in a mixture of flour, pepper, and salt, and fry slowly in the rendered fat for about 5 minutes. Add a cup of alcohol and 6 to 8 cloves, cover and simmer for 15 minutes. Prepare a cream sauce, transfer the sautéed mice to it, and warm them in it for about 10 minutes before serving.

Stuffed Dormice:
Prepare a stuffing of dormouse meat or pork, pepper, pine nuts, broth, asafoetida, and some garum (substitute anchovy paste.) Stuff the mice and sew them up. Bake them in an oven on a tile.

Stewed Cane Rat:
Skin and eviscerate the rat and split it lengthwise. Fry until brown in a mixture of butter and peanut oil. Cover with water, add tomatoes or tomato purée, hot red peppers, and salt. Simmer the rat until tender and serve with caulirice.

FIELD MOUSE PIE:
1 c. Dreamfield's macaroni
1 onion, thinly sliced
Salt and pepper to taste
Few field mice (or 1 lb. sausage)
1 med. can tomatoes
Dabs of butter

Boil the macaroni until tender (10 minutes). While this is cooking, fry a few field mice long enough to fry out some excess fat. Grease a casserole with some of this fat.

Put a 1/2 layer of macaroni in casserole; add a layer of onions and the tomatoes, juice and all. Salt and pepper to taste. Add dabs of butter and mice.

Bake about 30 minutes, or until field mice are done. Serve hot or cold. If you find it difficult to find field mice, you can use sausage, but you won't be living off the land!


Enchiladas El Mouse-o EN EL HOUSE-O:

6 corn tortillas 6 mice parboiled, stripped, boned, chopped, seasoned. 2-3 large red dried chiles soaked in water 5 min. l chopped green onion, cilantro for decorating. oil/onions. salt pepper to taste,

Make regular enchilada sauce by grinding the soaked chiles in the pot liquor, and straining well to separate the chile skin from the chile's red meat. Then, fry onions, throw sauce in for l minute. Set aside.

Heat tortillas on a greased skillet, drop into sauce until covered, pull out, then fill the sopping wet tortilla with about 2 tbsps. mouseburger, roll. Set rolls in a dish, line all six up. Pour remaining sauce on top. Decorate with any old cheese, l chopped green onion. Bake l5 min at 350.

I totally agree! I mean . .I LOVE veggies .. but a girl has to get her meat on!

I have never eat mouse before .. but I have had Armadillo (roasted over a spitfire .. was like an all white meat pork roast), rattlesnake, gator, turtle, frog, ostrich (excellent jerky), buffalo, and more.

Some may think I am insane, but with all the teasing people do about Chinese food being made from cat .. well .. if I knew how to cook cat and have it taste like all my fave chinese dishes .. we would not have a prob with strays!

can't say that i'd be excited to eat a mouse lol....but i've had frog, turtle, and deer before. All tasted like some variation of chicken. LOL!
