Anybody found a LC canned soup
 
It would be nice to have a canned soup for quick meals when needed. So far I haven't been able to find one which isn't carb prohibited. Any suggestions?

A can of chicken broth and some eggs.
Make your own egg drop soup.

A can of tomato sauce, some cream and water. Look on-line for cream of tomato soup recipes. There are variations on the seasonings added.

I know what you mean. I miss the convenience of canned soup especially during cold season. But I've eaten a can or two and it really doesn't taste that good anymore to me.

Now I make soup and freeze it so I have the convenience of ready-made when I'm feeling puny. I'd like to learn pressure canning so I don't have to take up so much freezer space.

Linda Sue has some awesome soup recipes that I *believe* can be frozen. I'd link bit posting from my cell...

Alas, our WOE isn't always the most convenient. At least there's BACON! :-)

I looked at many soup cans this weekend. Didn't see anything that would work for me except the plain broth.

Here is what I do for a "quick" soup. Can of chicken broth, refrigerated pre-cooked bagged diced chicken, celery (pre-chopped). Throw it all in a sauce pan and cook until celery is soft (or you can leave it a little crunchy if you like it that way.

If you aren't on induction, you can also throw a few carrots and Dreamfield noodles in (few being the key word) and it tastes almost like canned chicken noodle soup.

I eat Progresso Light soups. Great in a pinch. I choose the Beef Pot Roast which is (for the whole can) 16 nc. if I eat one this can still easily keep me in my 30 nc count for the day. If I can find any soups that keep me under 20 nc for the whole can then I can eat it. I am just careful to combine it with very low net carb foods to complete the day. The Light chicken noodle is a good one also.

I also needed a quick go to soup and this fits the bill.

Progresso used to have a soup that had LC or carb conscious on the front, but I haven't seen any in a long time. I loved them.

Not hard to make low carb soups. We do it regularly, freeze them, and enjoy them later. I grew up on homemade "sausage-vegetable" soup. Leaving out the potatoes, noodles, and carrots makes it a great low carb staple. My wife likes chicken better than the smoked sausage in it, but both work great. I grow bamboo and use the shoots along with green beans, celery, tomatoes, and the like. A little bullion adds to make it easy to make. Takes longer than canned, but is worth the effort and very tasty. If you pressure can stuff that would work well and make it as convenient as store-bought versions. l like the avoiding of freezing, but we haven't done that in years.

No idea on canned soups, but it's fairly easy to make a very quick cream soup.
  • Put frozen veggies of choice into microwavable bowl. Cover with chicken broth.
  • Add spices/seasonings and microwave until veggies are softish (five minutes or so)
  • Add cream, cream cheese, more seasonings, butter, whatever you like to enrich it.
  • Use an immersion blender to puree.
  • Enjoy!

I like curried carrot or cauliflower soups, turnips and spinach with italian seasoning and a bit of tomato paste, mushrooms and celery with sour cream, beets and a dill pickle with fennel seeds and cream cheese, okra and onion with chili powder and tomato paste...

All take fewer than 10 minutes to make, and are very satisfying.

I would just like to inject that I think that making your own would be cheaper, and healthier. You control exactly what goes into it. Take one of your days off and make a TON of soup, put it into containers, and freeze. Bam. Soup any time you want it. Seriously, for the, say, 1.25? a can (I think that's being generous) you can buy a pound of chicken thighs and make a luscious, tasty, healthy soup with no preservatives or weird ingredients. :)

I make a low carb version of Olive Garden's zuppa tuscano soup that freezes VERY well. When I make big batches of soup, I portion them out in those round single serve gladware containers for liquids. Throw them in my lunch bag and typically by lunch time they are on their way to thawing on their own. Just nuke for a couple of minutes and you're good to go.

I made a delicious soup the other day with hamburger meat, a little tomato sauce, canned tomatoes, green beans and okra. It was yummy. I'm going to freeze the leftovers in single serve packages. I don't see anything in it that would not freeze well.

I do miss me some clam chowder and sourdough bread bowls. I may have to investigate this further...
