Good morning! A lovely one here.
I've been up since 5:30, actually. Had to wake up to fire the smoker for SMOKED PORK BUTTS TODAY! Woooo! It's been over half a year since I've fired up the ole' Weber Smokey Mountain. Far too long for my little meat-loving soul.
The smell of charcoal, smoldering apple wood, and cooking pork is perfuming the air outside, not to mention my husband and me. :laugh: It's a smell I'll never tire of. A smell that reminds me of all that I've been missing these past few months, stuffing my carbhole with carbs. I intend to smoke a lot more in the future.
The pork butts are currently sitting pretty at 162 degrees internal. What we're looking for (for the pork to be pullable) is a temperature between 195 and 205. We have a remote controlled thermometer that tells us the internal temperature of the meat, as well as the smoker temp. Pretty cool stuff.
It's a bit of work, but when you do it right...oh buddy. Let me tell ya.

Embarrassingly, I think all I am going to eat today is my caloric goal's worth...in pulled pork. Pffff hahaha.
I swear, I'll eat vegetables on Monday. But for this weekend? PORK.

Maybe some trace carbs from my pork rub: salt, paprika, smoked paprika, no-salt seasoning, little cayenne, and some cracked black pepper.
B: coffee with sweet low, hwc and 1 tbsp CO
L: chicken salad made with mayo salt n pepper a little onion and a little celery
D: unsure, going out.
Not done yet. Still has probably a few more hours.

Thawing out a whole chicken and some hamburger ~ will see what I decide to make :)
Almond milk pudding to replace the pistachios. Back to a much better carb count of 13g. Don't know what I was thinking with the other menu plan.:stars:

*1 medium tomato, 2 tsp ranch, 4 romaine lettuce
*1 cup cubed beef fried in olive oil w/ carrots and onions
*lemon water all day today
B: 2 sl swiss cheese
L: 1/4 lb cheeseburger no bun
Sn: Quest bar ( tried microwaving it--tastes better!)
Dinner: chili cheese dog casserole
veggies / ranch
I need to pick up on my water drinking... goal 1 ltr sparkling water with lime more
