Shrimp scampi

Wanting to prepare some gulf shrimp we brought home from the gulf last trip tonight with my ribeye, but every recipe is calling for white wine, and I'm currently doing meat and eggs only.
I have some wine and it's a quarter cup for the amt of shrimp I have.

Leave it out? And just do the butter, herbs? When the wine is cooked and the alcohol burns off, does it still have carbs? I'm sure it's a small amt and I'm just being overly cautious but.. Made me wonder. Anyone know?

I think you are okay to add it -- the cooking will burn it off and wine adds a great taste. Don't forget the garlic!

I think the wine will be fine if you want to use it, I'm assuming the alcohol will burn off and whatever carb is left will be divided among however many servings there are.

You can also leave the wine out if you like, I'm sure it will be fine. Add a bit more water or broth if you think more liquid will be needed.

I replace the one with chicken broth for scampi. Works well.

Mmmmm. Shrimp scampi, one of my favorites. Did you decide to use the wine or leave it out? And how did it come out?

I decided to use the wine, and it was amazing! Because of the fat in the ribeye and the butter in the scampi, I got really full really quick... So today and likely tomorrow's menus will be ribeye and scampi lol.

Man this low carb "diet" is tough huh? Lol.

Yeah...it's such a struggle to give up all that high carb stuff that was making me fat, cranky and an out of control diabetic for steak, shrimp, lobster, etc.

It's hard but someone has to do it.
