It's FRIDAY! What Are You Eating Today?

Morning all.

Brekky: Two eggs scrambled in butter with smoked salmon, lemon juice and black pepper plus an Americano with Splenda and double cream.

Lunch: Lettuce, cucumber, black olives and mayo with a couple of slices of ham.

Dinner: Chicken mini fillets with parmesan cream sauce, broccoli and green beans.

Snacks: Peperami and a few cubes of cheese if needed.

Plus at least two litres of water and a berocca.

An Americano is just a black coffee made with espresso and a peperami is a meaty, salami style snack... not sure where you are in the world but I'm in the UK, if you google it you'll see what I'm talking about.

I'm going to grill up a bunch of thighs, marinated in olive oil and balsamice vinegar and some peppers, mushrooms and onions.
Enough to pick on all weekend, I'm a monotonous eater.

Peperami is like a Slim Jim, I think.

Anyway, for me...

Breakfast: Eggs fried in bacon grease, coffee w/cream
Lunch: Sliced tomato and basil from my garden, topped with chopped bacon and onion, with a cream/mayo dressing drizzled over
Dinner: Dunno yet... probably roasted chicken or chicken wings, garlic sauteed swiss chard or beet greens (whichever are bigger in the garden), and a couple glasses of wine.

Sure, it's actually really easy - I think it's similar to what Americans call alfredo. I used about 120ml double cream (heavy cream) and warmed gently in a pan. I then added about 40g finely grated parmesan and stirred through til melted. Finally I added a little black pepper, a shake of garlic powder and some chopped parsley. You'll find that adding the parmesan and the heat both thicken the sauce up. I cooked my chicken, broccoli and green beans seperately then just stirred the sauce in at the last moment. SO yummy!

L: Wendy's ranch bacon grilled chicken sandwich sans bun, Caesar salad, junior bacon minus bun, diet coke
S: So bad..., not hungry, just munchy. Lots of beef jerky and rather large handful of macadamia nuts
D: nibbled off the top of the pizza

not off plan, except for the jerky, but just a lot of sodium and calories. I've been struggling since July, and I've managed to eat clean this week.
