I really like to have a sunny side up egg over roasted asparagus.... The yolk makes a "sauce" to dip the asparagus in.

I also love a salad lyonnaise, or variation on that theme, which is basically greens (traditionally frisee lettuce) with bacon lardons and a bacony vinaigrette and a poached egg on top, so that the yolk runs into the greens like a sauce. Sometimes my salad is less classic than that, with different lettuce or other toppings, but the concept of a poached egg on top is still really yummy.

I was reading this post, which really got me craving some nice runny fried eggs! LOL So for lunch I made a "hash" of sorts, with onions, peppers, zucchini, mushrooms and sausage. And on top of that some yummy fried eggs with runny yolks. It was delicious! Thanks for the idea!

For dinner I made sautéed spinach with pepper bacon, tomatoes and vinegar today with two eggs cooked on top, good runny yolk into the mess and delish! First adventure outside toast or choking em down plain

I love soft-boiled eggs, cut up in a small bowl with a pat of butter melting on top, seasoned with salt and pepper. I eat it with a spoon. Not much escapes. What does, the cat enjoys when he's cleaning the bowl.

In fact, he's gotten to the point that he pesters me for his portion while I'm still eating, patting my leg and meowing loudly, wanting me to put the bowl on the floor for him to clean. There have been days I've cooked an extra egg, just so there would be enough yolk for both of us!

Egg yolk junkies (myself included) should experiment ASAP with Japanese egg yolk sauce over proteins, as well as LC versions Peruvian Huancaina sauce. Don't know why it hadn't occurred to me before!

I had Pap a la Huancaina once. Once... and I can STILL taste that amazing, smooth, cheesy/yolky sauce. I never considered that I could make it myself, or put it on something other than potatoes.

My favorite:

Fry bacon. Remove bacon, leave bacon greast. (Sometimes, I remove most of the grease and add butter). Add spinach (fresh or frozen). Cook. (If I am doing dairy, I will add heavy whipping cream to make a creamed spinach). Make 2-3 holes in the spinach for eggs. Crack eggs into spinach holes. I like my eggs medium, so I either put a lid over it or flip them.

The mixture of the sauteed (in bacon grease) spinach and the semi runny yolk with the spinach is awesome.

Eat with a side of bacon.
