A big salad with lots of different veg (different types of tomatoes, mesclun, peppers, scallions/onion, parsley, radicchio, cucumber, artichoke) and evoo/fresh squeezed lemon juice/salt/pepper.

It's so big that I eat it out of a mixing bowl.

Eggs in any form, bacon, cauliflower, kale chips, cheese chips. I've also been making low carb pork barbecue this summer, and it's been a hit for us.

Ntombi, how do you do your brussel sprouts? I love, love roasted brussels, but they are always hit and miss for me. Do you parboil or microwave to soften, before roasting in the oven? Do you roast in olive oil?

No precooking, I just slice them in half (or quarters, depending on their size), drizzle or toss with an oil (usually olive, but sometimes a meat fat, depending on what else I'm eating), salt well, add whatever other seasonings, and roast at 400* until they get nice brown edges. They need some fat on them to roast nicely.

I usually do just salt, pepper, garlic, and oil. Sometimes I use a little balsamic vinegar, the picture upthread has capers and lemon juice, an addition I stole from a nearby restaurant. As long as they're well caramelized, I love them.

Baby Bok Choy

I'm hooked - not horrendously expensive, easy to saute in a little olive oil (I add fresh garlic and a diced roma tomato to one cup chiffonaded baby bok choy). Salt and fresh ground pepper to taste.

Salt and vinegar almonds and pork rinds are the others, which I buy very infrequently.

My LC staple last time, and its proving to be the same this time, is my lunchtime salad.

Every weekend, I wash up a few heads of lettuce and clean some veggies to get me through the week. Everything goes in a Ziploc with a dry paper towel to help keep it fresh.

My lunch salad is always the same: 2-3 c. romaine or leaf lettuce with the following veggies: celery, cucumber, cauliflorets, a radish, green onion, red pepper, grating of carrot. Everything is in very small quantities, but the variety makes up for it.

I always use a couple of teaspoons of Paul Newman olive oil and vinegar salad dressing for flavor, with an extra drizzle of olive oil. With this, I will have 3-6 oz (depending how hungry I am) of whatever meat is leftover from the night before. Sometimes I'll have a bit of cheese on the side.

It's quick to make because the veggies are all clean and ready in the fridge and I just quickly chop what I want. YUM!
