I've been mugged by raspberries

My husband walked in the door last night with a strange look on his face and then plopped down *several* gallon buckets of red raspberries, a bag of lemons...and two 10 lb bags of sugar.

Yes it is that season when I normally make raspberry jam for the family...and apparently I'm making it again this year. Fortunately, while I love the smell of the hot jam, I'm not a sweet eater so that intense sweetness does more to put me off food than entice me to eat it.

My blood sugar is probably going to go up just from the smell alone.

I know how you feel. I made my husband his favorite sweet pickles this summer. I used 25lbs of cucumbers, and 25lbs of sugar!! It was a LOT of sweet pickles..

I'd freeze a few handfuls of the berries as a sweet, cold snack to keep your mind off the jam

Can you make some jam with sugar substitute or no added sugar that you can also enjoy?

Unfortunately, I am a diabetic and the only way I got off insulin was when I started following Dr. Bernstein's "Diabetes Solution" which means no fruit. Early on, after about a month of no meds, I tried eating about 5 raspberries while still staying within my 10 carbs for the meal. Not only did my sugar spike but it kept me messed up for 3 days despite not touching another piece of fruit.

I'm ok with it though. I kind of miss fruit but when I start reaching for it, I just remind myself of how good it feels to be off insulin. The jam doesn't tempt me *at all*.
