Gibbs, have you gone to sleep yet? I wish I had your energy!

For breakfast, I am doing my usual coffee with HWC. Tony and I both have the day off so I think we may eat our big meal in the early afternoon. We are leaning towards grilling burgers and hot dogs before it gets to hot here. I have some low carb rolls I need to get rid of too.

Our neighbors gave us some fresh blueberries and blackberries so I am trying to find a low-carb recipe for a Berry Crisp or a Berry Crumble that I can serve with homemade whipped cream. I have almond flour and coconut flour so I might be able to improvise this with eggs, vanilla, cream, cinnamon, etc. We'll see! In the meantime, I'm off to do a five mile walk outside and then back home for some time on the elliptical machine.

I tried BPC yesterday with 2 T butter and 1 T EVCO. Really interesting, but didn't keep me full as long as I thought it would. I'm going to try again tomorrow (I only have the patience to run the blender when I'm not heading for work) with more butter.

My wife, who has seen my personal transformation eating this way, said "eating all that butter cannot be healthy." Imagine that. My own wife. People just can't get around old concepts. Even the smart, beautiful ones.

I was not prepared today. We ate well yesterday, but I MUST go to the store. Nothing to eat, but some peanuts on the shell. I ate peanuts and drank coffee! lol

Ha, ha ... she and Peter Attia's wife would likely get along very well!

I use 1 tbsp c.o., 1/2 tbsp. butter and 1.5 tbsp 35% cream and rarely blend it. Just dump in the bottom of my coffee cup and pour coffee over it, give it a bit of a stir and done!

hi, trueyou. this is my tweeked recipe for cream cheese muffins:

1 8 oz block of Philadelphia brand cream cheese (softened in the microwave)
2 large eggs
4 pumps of sugar free DaVinci syrup (I have Kahlua & b-52 flavors)

mix all three ingredients with a electric hand mixer, then pour straight into muffin pan or use the cupcake papers/wrappers if you don't want it to stick to the muffin pan (or you can just pour all the batter into a pyrex baking dish. all the batter fits into my toaster oven sized pyrex dish) .

bake @ 350 for appox 20 minutes. you're cooking time may vary so keep an eye on them the first time you make them....maybe check after 15 minutes in the oven to see how they are progressing.

if you check out the recipe threads i'm sure you'll find lots more variations!

Dinner is decided

grouper filet with brussels sprouts and cauliflower mash . A helping of chili sauce at the ready if the fish taste offends. I have eaten fish about 10 times in my life ,that is twice every ten years..... But for the health benefits I will gnash my teeth and go for it. Who knows my taste buds might have changed .
