YUM...I feel like I cheated!

Made a low carb cheesecake for the fourth! Cream cheese, sour cream, eggs, vanilla, granular splenda with a pecan crust and some crushed berries on top. I feel like I cheated! I am sure I had more carbs than I usually do...I never really count. It was nice to stay on plan! It tasted like the full sugar version.

Awesome, that does sound soo good! My kids have been picking blackberries and I think I'll attempt a cheese cake.

I made Cream cheese stuffed strawberries. Basically cheesecake mixture stuffed into the berries and they were a Huge hit! I maybe got 4 of them because Everyone was eatting them

That is one of the things I look forward to 2 x a year. Once on my birthday and then again at Christmas! Here is a pic of last years'. I use Cleo's (of the lighter side) recipe and only change the crust (ultimate cheesecake). It is divine!! If there are leftovers, I freeze them in single servings and have them for a meal until it is gone.

I make the cheesecake too and it's delicious when you add a little bit of lemon juice or lemon extract. Whip it good to make it lighter. I pour heavy cream on top. Tastes great! I made a mock version of pretzel jello. Used pecans instead of pretzel. Used Splenda & Sugar free Jello. Cream cheese and cool whip. It's pretty for the holiday!
