Things that have changed since going low carb (under 25gm):

Insomnia: I now sleep 4-5 hours straight each night vs waking up every 1-2 hrs.
Fibromyalgia diagnoses: Muscle aches and joint pains are completely gone so they've decided their diagnosis was in error.
Fatigue: Gone. I no longer take naps in the middle of the day and have energy to accomplish what I need to and more
Depression (diagnosed as clinical and on meds for decades) - gone
Anxiety - gone
Blood pressure back to around 110/70 vs 178/89...without meds.
Diabetes - off all insulin and maintain an A1c of 4.9
Acid reflux gone
Headaches gone

I'm sure I'm forgetting some things, but these were the biggies for me.

I have been off wheat now for a week and a half. No changes noticed at all yet, including to my acid reflux.

My acid reflux did not suddenly go away with the elimination of wheat either. It turned out that it was an improper level of stomach acid and as long as I continued to take the o.t.c. meds, it persisted. I eventually went cold turkey on the meds and within 2 weeks, it subsided almost entirely. Another few months and the it was gone until I consume even the tiniest bit of wheat (I.e. have a beer). Tummy ache and a bit of acid reflux always ensues within 1/2 an hour.

You are tougher than I am. I can't even wrap my mind around spending 2 weeks worth of nights up in agony, throwing up stomach acid all night long. It was beyond horrible and I can't even do one night of it anymore. Since trying life off of wheat, I have tried to take 2 different nights off it the med, No dice.

My nephew is allergic to gluten, and as soon as he stopped eating wheat, the sun shone, birds sang, and his life did an upward turn. Of course, not everyone is sensitive to wheat or gluten. It has made no change at all for me. I will give it another couple of weeks, then go back on it and see what happens. And yes, I am aware of the anti-wheat books and the books and studies countering the anti-wheat books, etc. There is a vast disagreement on the subject of wheat. I am just going to go with what works for me.

I did finally break my 2-month stall, but I have no way to know it that was the wheat or pure coincidence. I broke one stall with 3 glasses of wine a few months ago!

I'm late to the party, but wow-- ditching wheat made such an impact on my life!

I totally kicked these things to the curb when wheat went out of my life:

Crawling legs
Congestion
Inflammation
Extreme hunger
Lethargy
Depression

Those are just a few of the positive effects. I only wish I'd known earlier! I spent decades with congestion and never once had a clue that it was wheat!

No headaches.
No bloating.
No fatigue.
No anxiety.
No fogginess.
No feeling of 'not feeling right'.
No emotional instability.
And weight loss! (in 2002, I weighed 186 lbs and wore a size 18. I don't know what I weigh now but I am a size 2).

On a side note, I gave up ALL GRAINS (including gluten-free grains. It was more than just the wheat).
