Cooking for the family

If you are the main cook in the family *wave* how do you handle family meals? Specifically sides. The main dish is no problem. I can find dozens of ways to cook meats that everyone will eat. But lately, I've just been making a meat with a salad on the side. The kids are getting tired if that. Lol
It's so frustrating because there is NO vegetable I can make that everyone likes. Well except potatoes and corn. :-/
So I need some ideas for things to make to go along with the main dish. Do you still make pasta or rice dishes for the family, but just avoid them yourself?

It's just my husband and me, but yes, I'll make a LC meal for the two of us and then cook some beans and rice or some potatoes for him. Luckily he likes leftovers for lunch, so the carby stuff gets used up.

I'll make something for both of us, like a stir-fry, and cook rice and get some hoisin or oyster sauce for him while I just use soy sauce.

I'll make spaghetti sauce. He gets noodles, I get the sauce on steamed zucchini or broccoli with a piece of leftover chicken or meat.

Pot roast in the crockpot, with just the natural juices for me, and then I'll take out a little of the juice to make a quick gravy for him if he wants it. I'll put enough potatoes in it for him, and I'll avoid putting them on my plate.

And then there's some LC recipes that he really likes.

pureed cauliflower (1 bag frozen cauli cooked till very soft, 2-3 Tbl cream cheese, Tbl butter, salt and pepper, whirl in food processor)

ETA when I make spag sauce, I save some of the leftovers for me. cook them down a bit to use as pizza sauce forLC pizza-type dishes.

Some side casseroles, something like broc or cauliflower with cheese sounds good.
If you have kids, most seem to like cheese. You would have to count your cheese carbs, but you could still have a nice portion.

Sometimes what works, if you have grill, is just to grill an assortment of veggies, and everyone can pick what they like and disregard the rest.

Great idea on the roasted/grilled veg. I do that when I have dinner guests, and it would work for the family for sure.
Asparagus, green beans, turnips, mushrooms, brussels sprouts and a few onions for us, and then toss some carrots, potatoes, and sweet potatoes in for them.

I have a super-easy one-dish meal. Casserole dish, uncovered, pan spray. Layer some onions and thinly sliced potatoes. Dump on some frozen green beans. Toss with olive oil, salt, and pepper. Put hot italian sausages (or a mix of hot and mild) on top. Turn sausages every 15 minutes or so. 375 for 50 to 60 minutes. Canned mushrooms are good in it too but fresh mushrooms don't cook right in it. I toss the shrooms in at the second turn of the sausages.

I just always do a meat and non-starchy veggies for me, and then I add in what everyone else wants. Pinto beans, potatoes, or rice usually. It works for us. My family lives with my aging parents, and if they want something like lasagna or chicken pot pie, I just use a frozen one. They don't seem to mind and I don't have to stress myself out over it. The thought of making those things and NOT eating them is just wrong to me

I cook for my family. I always base meals around a LC meat dish, then supplement it with LC veggies and a high carb side for the kids and hubby who feel they can't do without. I find I actually cook more "real" food than I ever did before, use less processed products, and we're all eating better. I've found that most fried or baked meats that traditionally use breading don't really need it. For example, my family loves my fried cube steak, simply seasoned and fried in expeller pressed coconut oil (imparts no flavor) and topped with a creamy pan gravy, made w/just the drippings and heavy or light cream, cooked down a bit to thicken. It's so delicious! Or chicken tenders "breaded" in mayo or ranch dressing and shredded parmesan cheese. Sometimes if the fam wants something more cassesrole-like, I'll take some of the meat-based filling, before adding any starch, and put it in a small baking dish for me (like enchilada filling). We have a lot of roasted or sauteed veggies - kids don't like salad, and son likes very little veggies, period. I just do my best, but I DO NOT make separate meals. Everyone eats what I make, or they do without.

I love roasted veggies, especially asparagus and brussels sprouts, both of which my 8yo dd adores, amazingly enough. If you want to get really fancy, you can toss roasted brussels sprouts with diced avocado and chopped pecans. I saw that recipe from a famous chef in Food and Wine magazine, and it really is delicious.

Another great combination is eggplant (peeled and cubed) with red pepper, red onion, and mushrooms. Add a splash of olive oil and a sprinkle of kosher salt and roast for an hour. So good! You can also put this in the food processor with some cream cheese for a great dip or spread.

I'll roast cauliflower with lots of whole garlic cloves (about 30 cloves, peeled but left whole) and olive oil. That's really good too.

How about a salad of baby spinach with strawberries, feta cheese, and red onion. Then whisk together some fresh lemon juice and olive oil for a quick homemade dressing.

When I'm making pasta for the rest of the family, I often make zucchini ribbons using the veggie peeler. Then I saute them in some olive oil to replace the pasta for myself.

You can grill romaine lettuce, and it's delicious. Slice lengthwise, brush with olive oil and grill for just a couple of minutes. Then sprinkle with some parmesan cheese.

Also, I think I'm a bit behind the times, but I didn't realize how easy it is to steam veggies in the microwave. For instance, I just put some broccoli florets in a bowl with a TB of water; cover with plastic wrap and nuke for 5 mins. It's really good - I actually think it tastes better than when it's steamed on the stove. And best of all, no pan to wash!

This^ exactly.

And a question- is the rest of the family heavy? Would it hurt them to eat
corn or potatoes or rice or noodles? You don't want to head them in the
wrong direction- if you can help it.

I still make a carby side for DH and DS. I just dont eat it. I make a protein, a veggie and a carb. Everyone is happy. For the carbs, they get easy stuff like pasta, beans, rice, bread, baked potato, etc. I am not going to spend all my time making something I cant eat but these things are no problem to cook whilst the protein is cooking.

I'm dragging my family with me on this adventure. I try to do things like loaded "potato" cauliflower or broccoli with cheese sauce. I have a vegetarian in the house (who is voluntarily keto), so that adds enough stress to the meals.

I've read enough about how bad the processed carbohydrates are. I've explained to my kids that I feel like, now that I know this, I would be being a bad father if I fed them that crap. They get more than enough at school and friends' houses. They've all flirted with overweight or obesity; I don't need to help them.

There are so many options for low carb dishes even in the 'induction food porn' thread (not to mention the low carb food porn threads, that just about any 'former' food is presented in a low carb version which turns out to be fabulous. No need to be restricted to meat and salad (even though, that is awesome in my opinion)!
