I've surprised myself by how satisfying the Kale chips have been. I took a container of them on a road trip of about 5 hours. I usually stop at a gas station to get a snack and their selections stink so I often get star bites which are nuthin but sugar and peanuts but the crunch helps keep me focused. This time I had my kale chips and while they aren't as substantial, the crunch factor was just as effective and tasty. I passed all the gas stations and saved some pocket change from not buying junk food! Haha! But remember to have some water along cause it does get salty after a while.

I still really like zuke chips but it takes longer to make and they disappear too fast!

I just bought some more microwave pork rinds today. I'm all crispied up for a while!

I use the oven at 200 degrees, same as Kale chips but it takes much longer. I have a dehyrator so I should try that.

Also I need to remember to move the rack from the lowest position because browned zuke chips are a bit bitter. They should stay light in color.

ETA: Another Chip Tip: Don't slice your tomatoes too thinly, or you'll almost NEVER get them off the parchment paper! LOL

I'll bet it would work well to dehydrate slices of eggplant, too.

Made Squash chips...they came out kinda funny, but they made good chips. I think they have more flavor than zukes so it was kinda strong and concentrated when dried, but I like squash so I didn't mind. Gonna try again in a few days.

Bacon is GOOD!
Buffalo Wings are GOOD!

An easy yummy recipe from the vegetable side dishes thread . . . . sliced cukes in sour cream with a splash of vinegar. Salt, pepper, and dill to taste. Defo crunchy and could be made a salty as one likes. I'll find it and credit the source.

WOE: low carb - 1400 calories
I really like Carb-O-licious melba toast. 4 toasts for 1 net carb and 70 calories. Each toast is small - about the size of a Triscuit. They are crunchy and taste good to me. Sometimes I put cheese on them and nuke. Sometimes I just add my favorite dip. I also like Simply Protein chips made with pea protein. They're 140 calories a bag and 10 net carbs.
