I used to love veggies. Still sort of do - but I just don't like them plain - they have to be mixed in something. Even then that has to be disguised really well with seasonings and whatnot. But I can't imagine always making casseroles :dunno:

Any tips on how to make vegetables more exciting? Seriously, I used to be a veghead and now all I want is steak with butter. :laugh:

What plan are you on? Personally, I don't eat much in the way of veggies. I do a really strict Atkins 72 Induction sticking to just Meats, Eggs, and Cheese.

Starting back to LC, i guess Atkins ish/primal. I feel weird NOT eating them but it's okay if I don't, I guess. Just not long term.

I don't like veggies either. Unless I can drown them in a sauce or dressing to make them more appealing. I don't get much in and don't worry about it. Just eat what I can when I want and don't force myself to eat what I don't like.

OK, here's the deal - you cook your veggies in some boiling water, and put them on the side to drain. Then you get a pan and sweat a little chopped onion or shallot in some butter. Add garlic if you like it. Pour in around 250ml of cream, and bring to the boil. Let it thicken a little bit, then throw in some grated Parmesan. Add black pepper to taste. Remove from the heat and pour it all over your veggies. Eat, and give praise to the low carb gods :)

I don't force veggies at all. I really love them, but I don't lose we'll if I eat much at all. I probably have a small salad once or twice a week and most days I eat a whole avocado w some fresh salsa. That's it for me, and it looks like most of my veggies are fruits. lol But I feel great and my digestion is good.

My favorite methods:

• crudité w/ creamy dip
• main course salad w/ protein and homemade blue cheese
• steamed and topped with herb butter and grated parmesan
• drizzled with olive oil + vinegar and oven roasted
• stir fry with leftover beef or bacon fat
• curry w/ coconut milk

Have you tried Roasted? Or Fried.

Roasted Cauliflower

1 head of cauliflower, cleaned, separated and lightly chopped..... (I have used 2 small--with no addition of spices)
1/4 cup olive oil
2 tbl minced garlic
1/2 cup parmesan cheese
2 teaspoon dried parsley flakes
sea salt and ground pepper to taste

Direction:
In a large mixing bowl combine cauliflower, olive oil and spices toss until ingredients are evenly distributed.
Preheat oven to 425° degrees Fahrenheit
Transfer cauliflower to greased baking pan (I cover it with non-stick aluminum foil) and bake for 25 minutes stirring each floret in the middle of baking.
Sprinkle parmesan on top and roast for 4 minutes more

We love to top this with low carb ketchup like heinz low sugar 1 carb.

Shred and mix into meat loaf, chop and use in soups and chili, deep-fry or stir-fry, make salads out of traditional sandwich fillings, whip up a green smoothie. Serve with a tasty curry or peanut sauce, make crudites and dip. Or skip them altogether.

Get the La Choy chop suey vegetables in the can. Mix up a few eggs with a splash of soy sauce, add in the veggies, then fry in a pan in patties. Easy egg fun yung. Low carb, low cal, super yummy:love:

I love almost all vegetables and eat large variety of them every day. I mean there are so many ways to prepare them- salads, stews, soups, roasted, sauteed, grilled. You just have to try different methods of preparation. I think most people (at least the ones I know in real life) that hate vegetables have only had them prepared really badly, like over boiled and mushy, or vegetables from a can. Every vegetable hater somehow loves eating them at my house. I think everyone should experiment with them because they are just too nutritious to leave out completely.

I also don't put a lot of stuff on my vegetables- I don't like covering up their taste and I'm at goal so can't afford to put 500 calories worth of cream or cheese on vegetables. I think the best way to like vegetables is to buy really fresh ones and experiment with different recipes. A big salad is a great way to eat lots of vegetables, use a mixed lettuce, cucumbers, avocado, campari tomatoes, peppers, radicchio, scallions, parsley, make a dressing from evoo and fresh lemon juice, and add salt and pepper.

I don't agree. I think it's possible that all things being equal, it's a good idea to get some veggies. But I am not convinced of that, and all things aren't always equal. A lot of us have been pretty damaged by what we have eaten in the past and/or have genes that don't handle a lot of foods well. Two ways I'll eat them up - ovenroasted, or grilled.

To ovenroast, cut them into bite-sized pieces if needed; halve things like Brussels sprouts. Really good choices are cauliflower, broccoli, eggplant, zucchini, onions, asparagus, mushrooms, green beans, any color pepper, hot or sweet. Mostly, anything I've tried! :) Toss or brush with some olive oil or melted bacon fat, put in single layer on foil-lined sheet, sprinkle with garlic salt, and roast in preheated 400* to 450* oven (depends on what else I'm cooking) and keep an eye on them, turning over or tossing in 10 minutes, do this til they're browned to your liking.

For grilling, brush with olive oil and sprinkle with garlic salt and a little dried thyme, which I crushed in my palm before sprinkling the veggies. I use a grill pan for this so the veggies won't fall between the grates. Cook til tender. Faves here - eggplant, peppers, sweet potato slices, onions, asparagus.

AND if I'm stuck with steamed veggies, a good spoonful of Tostitos Salsa con Queso cheese sauce on the hot veggies is pretty tasty!

What's a typical day of meals then? I keep seeing "don't overdo the protein" but if you take out the veggies...then i feel like all i'd have left is meat, lots of meat, cheese and then cream in my coffee...:dunno:

One way I havent seen mentioned yet that I really enjoy vegetables cooked into soups and stews.... they take on the flavor of whatever meat or chicken I'm using.

I've been meaning to make Dawn's cauliflower w/ ham casserole. It seems everyone who has tried it has loved it. You could try making that. Other veggies we love are roasted greenbeans and roasted brussell sprouts. Fill a baggie with olive oil and throw some italian seasoning in it. shake the veggies in the bag and roast them in the oven until they are slightly black. I like to shake parmasean cheese on top. My daughter likes them plain or with a little salt.

She eats meat only. I have read her posts before and previously she said she eats in particular a lot of ground beef. Not sure about the ground beef now since she had the baby, but she is eating meat only. Works for her :up:

Zuchinnis sliced lengthwise and broiled with a swipe and butter or olive oil, seasoning to suit, and sprinkled with a little parmesan are really good.

For me, a typical days menu is.....

Breakfast ~ Bacon with some mayo on it

Lunch ~ 4 hardboiled eggs mixed with some mayo and mustard for an egg salad, or some tuna mixed with mayo and heated up with some cheese melted on top

Snack ~ If I'm hungry a snack, I'll have a Boar's Head hot dog

Dinner ~ Ribeye Steak, or a Pork Steak with lots of fat on it, or some ground beef mixed up with some cheese and mayo

That's it. No veggies, very strict Atkins induction, but totally satisfying. I'm never hungry and there's a lot more fat in my diet than protein.

OK - here's a question for those who don't like (or just don't add) a lot of veggies: as we sit and eat our protein based meal at the dinner table - w/NO veggies on the plate, what do we say to our kids - you know, the ones we've been telling since they could eat solid food that they HAVE to eat their veggies? Yes, for us in the old days, those "veggies" were corn or peas (blech!). If I worked that day, I say, "I had a HUGE salad for lunch - which is true. I love salad. But some days I'll go all day w/no veggies. I've managed to get over the "low fat" and "many servings of whole grains" mantra, but not the "no/low veggies" refrain.

Any suggestions?

I do eat veggies- but your excuse could be:
"Veggies make you grow. I'm done growing."
(Same with milk :sick: )
