Coconut milk carbs

I love coconut milk* - in soup, in curries, in chai tea. *slurp* Unfortunately, coconut milk comes with some carbs - too many for me to indulge in as often as I'd like.

Does anyone know if the carbs are mostly in the separated liquid or mostly in the creamy fatty goodness? Can I chill my coconut milk, let it separate, drain off the liquid and assume that xx% of carbs are gone down the sink?

*fantasizing that coconut milk liquid is like whey in cows milk*





*By coconut milk, I mean the real stuff, not the strange pseudo coconut milk beverage in the cooler case next to the almond/soy/cows milks.
