My favorite snack
Celery with cream cheese and McCormick's Salad Toppings sprinkled on top. It gives it an added flavor. There are 3 carbs in 1.5 tablespoon, but I doubt if I use more than a teaspoon.

Pork rinds with jalapeno slices. Don't crave a snack often but this seems to do the trick.

This reminds me that I used to top chicken breasts with a mix of mayo and mustard and sprinkled that salad topping on the top. All baked together it was a really nice flavor.

I just baked some oopsie rolls for the first time and they will definitely become my favorite snack. I added some cinnamon and butter to one and it tasted like French toast. I can't wait to make some savory ones with garlic, cheese, etc. The possibilities are endless! This will give me a lot more options for meals too. Grilled ham and cheese on these would be great! I am so happy that I finally made some of these! Very easy and certainly worth the effort!

favorite snack is pork rinds with cream cheese smeared on them----or lay some on a plate and top with your choice of shredded cheese and mike about 30 sec till cheese is melted---sometimes i add a slice of pepperoni then top with the cheese and mike---these are addicting---

Oopsie roll recipe came from "your lighter side" web page (google oopsie roll and it should be first result. Here is the recipe:
Oopsie Rolls (Gluten-Free Buns) 3 large eggs pinch of cream of tartar (1/8 tsp) 3 ounces cream cheese (Do not soften) Preheat oven to 300 degrees F. Separate the eggs and add cream cheese to the yolks. Use a mixer to combine the ingredients together. In a separate bowl, whip egg whites and cream of tartar until stiff (if you’re using the same mixer, mix the whites first and then the yolk mixture). Using a spatula, gradually fold the egg yolk mixture into the white mixture, being careful not to break down the whites. Spray a cookie sheet with non-stick spray and spoon the mixture onto the sheet, making 6 mounds. Flatten each mound slightly. Bake about 30 minutes (You want them slightly softer, not crumbly). Let cool on the sheet for a few minutes, and then remove to a rack and allow them to cool. Store in a loosely open sack and allow to rest on the counter before use (otherwise they might be too moist). Can be frozen. Notes: If you are making these to be savory (for burgers) you can add dry mustard and dill or other seasonings to the yolk mixture. If you want a more sweet roll, add a very small amount of stevia natural sweetener to the yolk mixture. Makes 6 Induction Friendly, Gluten-Free rolls. Nutritional information per roll: Calories:85 , Carbohydrates: .6 g, Fiber: 0g, Net Carbohydrates: .6g, Protein: 4g, Fat: 7.5 Picture: No more lettuce wraps. Wendy’s Baconator on an oopsie roll. |

Line a paper or microwave-safe with a paper towel. Place pepperoni slices in a single layer. Microwave 1 minute for 14 slices, increase time for more/decrease slightly for less. They will pop and sizzle quite loudly, but let them go. Should be crispy when done, but not black and burnt. Great to dip in sour cream!

Gibbs they are delish! 1 can tuna 1 packet of splenda 1 can of pickled jalapeños Open can of jalapeños and cut in half, scoop out seeds and membranes with spoon.....careful they are delicate. Set aside Can of tuna mix with mayo just like you would for a sandwich or anything else. Add one packet of splenda and mix well. Fill jalapeño halves with tuna mixture and put in fridge till chilled. Enjoy! Pickled jalapeños have 2 carbs per pepper so basically they are 1 carb each. A great snack. |

Lately I've been enjoying 3 or 4 T of trader joe's mascarpone w a packet of truvia and a little maple flavoring. It's also great spread on a one minute muffin for more of a meal.

i like cheese with sliced chicken...
my new fav that i just discovered is BBQ flavored pork rinds... I absoulutley used to HATE pork rinds i never used to eat them but since i found the BBQ and Cheese/Jalapeno i think i can eat them lol |
