My Mom Hates me!
Ok not really but Dang she's making me suffer! Lol! She is an Amazing cook, bakes like a pro! Since she's retired she makes my kids treats for when they get off the bus. Anything from cakes, pies and today it was Homemade donut holes! I was sitting there white knuckling it while my Dad was snacking away on them! Oh man I had to hustle the kids out of there asap before I caved! But I didn't!!

Geesh! That's verging on eeeeeeevil. Have you read The Diet Cure? I'm loving the control I have now that I'm taking a supplement that helps kill my sugar cravings as recommended in that book. Makes difficult scenarios like yours more manageable.

I just Knew if I had even 1 i'd keep eatting until they were gone! And I asked myself if all that sugar and flour etc would Help me lose weight! Answer? NO it won't plus it'd make me feel like crud! Lol! So not worth it when i'm getting closer to my goal!

I know the feeling. My boss likes to bake and he left a gigantic apple turnover and a hunk of banana bread on my keyboard while my back was turned. I found them a good home. :P

I'm a former pastry chef...now disabled/retired...but I learned how to bake with seeds, almond flour, coconut flour, etc. and the Grandson will eat that too...doesn't miss the old way at all in fact.
Perhaps you might want to look up a few recipes using sugar substitutes and other types of flours and ask her if she would try that for you. I make cream puffs out of 'reveloopsie roll' dough with sweetener in it...and then fill it with whipped HWC. There are a few recipes for doughnuts with almond and coconut flour too. Good for you for not eating them. I have a 'built in' reserve..I have Celiac and very badly if I get gluten at all. It's my will power when I have none, lol. |

I ditto Lokabiebarbie! Most accomplished cooks/bakers love a challenge so stock up on nut flours, flax, coconut oil, whatever low carb sweetener you use and turn your mom loose on it.
My goal this year is to learn the chemistry of baking and apply it to producing LC baked goods. In the meantime, I'm committed to trying at least one new LC baking recipe every weekend this whole year. Already I've found two real keepers for my recipe box - and admittedly found a couple that were either regrettable or forgettable. But what fun! It's an adventure every week! |

Does anyone have a favorite recipe for low carb chocolate cake, for a special occasion? I've tried a couple of recipes in the past, but wasn't thrilled with them.

Thanks, Julie. I've made that cake and liked it. I think I'm going to try the Chocolate Pecan Torte someone mentioned on another thread. Sometimes we get to indulge, in a low carb way! :-)
