It's WEDNESDAY! What Are You Eating Today?
Clare – it was my first time trying the mini mushroom ‘pizzas’ and they were absolutely lush, definitely adding them to my repertoire!!
Breakfast: Coffee with single cream and splenda (I have made the switch from double to single as I have discovered that single cream is closer to being equivalent to heavy cream, the calories are much lower and the carbs are only fractionally higher). I may also have an Atkins café caramel shake a little later.
Lunch: Homemade cream of mushroom soup sprinkled with grated cheddar.
Dinner: Chicken mini fillets topped with Philadelphia cream cheese wrapped in prosciutto served with green beans. I usually use a whole breast and stuff the cream cheese inside but I’m sure it will work just as well with the mini fillets. I also made some lemon cream cheese clouds for the first time last night so I may have one or two for dessert.
Snacks: Peperami, babybel if needed.
Plus at least two litres of water and a berocca.
B-burger patty w/reduced carb ketchup.
L-salad greens with tuna salad and hb eggs.
D- my menu plan says shark and slaw but I don't feel like fish.
Might make crack slaw with ground venison instead.
Snacks, optional- pumpkin bake or oopsie with tuna salad or sliced egg.

B-2 cups coffee with HC, Sausage patty, 2 eggs whipped with cream, scrambled w/butter
L-Sliced ribeye over spring mix, blue cheese dressing
Breakfast was a EAS carb smart shake with a diet coke, lunch will be a side salad and some of Linda Sue's chicken parm bake, will have the rest for dinner, mabe make some of the chicken lazone when I get home from class if I am still hungry.

TOTALS: 8g net carbs 87g fat 40g protein
B-vanilla egg cream shake w/chia seeds
L-grilled chicken salad
D-meat or fish(not sure which yet), kale w/garlic
I just have to say...I made Linda Sue's Coney Island Chili Dog Pie last night and it was the most yummy thing I've eaten in a long time. If you haven't tried it yet, I highly recommend it.

L: Pepperoni and .75 oz cheese
S: .75 oz cheese stick

D - Wednesday is our night off from the gym cuz it's CRAZY busy on Wednesdays so I'm actually cooking dinner tonight. (Normally, I cook all of our meals for the week on Sunday & then we just add a veggie, reheat & eat after the gym). Tonight I'm tossing spaghetti squash with zucchini, a little mushroom and onion, garlic, spinach and italian sausage with a fresh spinach salad on the side. I just can't make up my mind if I want to make an alfredo sauce for it or just use olive oil and oregano.... suggestions?

Just ate 2 Atkins bars! :lol: Its TOM & I'm trying to study for a test tomorrow which = I need chocolate :love: They came in the mail today as a free sample and I just couldnt resist, but at least theres only one left now.. Will eat it as lunch in between class tomorrow!
Also, Harmsway.. If it were me I would probably just stick to the OO & oregano.. but thats because i havent had the best experiences trying to make home made sauces. They usually taste very..."interesting" lol. But Im sure you could find a yummy recipe somewhere on here!
