At one time dieticians considered margarine, which is a trans fat, heart healthy. Doctors now say a better choice is butter.

In the last 20 years, trans fats have become the ingredient of choice for almost all processed foods. You can tell something contains trans fat if you see the word "hydrogenated" in the list of ingredients.

Saturated fats have really gotten a bad reputation over the last couple of decades. But they are not as bad as they have been made out to be. In fact, doctors recommend eating some saturated fats every day, such as coconut oil.

This saturated fat fights colds and the flu and has even reversed the symptoms of Alzheimers, ALS and Parkinson's Disease in some people.

Say 'No' to Inflammation

You should also remember those non-fat foods that make us fat and increase inflammation contain sugar and refined carbohydrates. Anything containing high fructose corn syrup or other sugars leads to inflammation.

So do grains, especially refined grains such as white bread, pasta, rice, and so on.

So when it comes to your health, inflammation beats out cholesterol as the new enemy. Take it on by saying "yes" to foods like fish and coconut oil, and "no" to sugar and carbohydrates, and dangerous trans fats.

I remember in 2001 or 2002 starting Atkins for the first time and everyone thought I would be dead in a few years from eating so much fat. Now I see so many people in the health care profession eating low carb.... a nurse told me back then, " you can't live without carbs your brain will not be able to function" My reply," I am eating carbs but it is lower carbs from what you eat". Yeah, eat the pasta and bread don't judge me. We have all had validation from many sources now.

I agree ...the other day I was eating a nice big salad with steak, veggies,egg and blue cheese with full fat ranch dressing. Someone said you need carbs to function...I said there are so many healthy carbs in this...as a matter of fact I said there are carbs in every food...how can you ask me why I eat no carbs...Do I look tired? Do I act like my brain isn't working? Am I screaming for more food in a couple hours or jonesin' for a candy bar? NO...so why do people keep dissing this way of eating...they are scared and confused and stuck in their own carb addiction...fear is a terrible thing...not that it is their fault...they are just doing as the majority is taught to do.

A friend of mine wagged his finger at me when he saw the 36-pack of eggs at my house - said it'd send my cholesterol sky-high. This same guy has diabetes but eats pasta and bread all the time. He never eats vegetables, and was recently in the hospital for a cardiac problem ...

I told him I'd read a good book recently about how a lot of nutritional advice is way out of date, but he wasn't interested enough to write down the title. When you think you already know the truth, it's hard to consider the possibility that there's something more to learn.

With all the information that can be had nowadays, there is no excuse for thinking that way! I can't stand when people start to criticize low carb when they themselves eat GARBAGE. In the end, it is their own life they are risking so what can you do but sit back and watch. Really unfortunate :(

Great to hear! And yet, just this morning I listened to a Cardiac specialist on a Canadian talk show tell people that they must avoid fats that are solid at room temp as they will be the same in their blood stream. What a load of hooey!

I have run out of tv talk shows to watch because they keep pedaling the same old bad science (in most cases - no science - just parroting what they think is true). It is like finger nails on a blackboard to me..... moving closer and closer to no cable.

I saw that CBN show and was floored to hear Pat Roberson say that "Atkins was right way back when wasn't he?" I loved it!!! I was so glad to hear that he was vindicated. Pat also said that Atkins was a great guest on his show back then. Would come in to get his haircut for free on set. He loved that! Haha. But I am very glad the word is catching on and being brought into the mainstream.

Eating this way is actually a very big social problem for me. I'm constantly pressured into eating things I don't want to eat "just this once" and accused of "starving [my] brain of carbs" because I won't eat pizza. If I ate carbs "just this once" every time someone said "just this once," I would be gaining a lot of weight.

I manage to say "no" to the excess carbs most of the time, but occasionally I feel the need to make up lies such as "I just ate a huge meal" or "I'm fasting for a blood test right now." And even then I'm accused of being rude if I'm at someone's house and they offer me pasta or sandwiches.

And none of the people I encounter are willing to listen to the science behind it, although I'm also pretty poor at expressing myself (at least in person) so that could be a big part of it. For the worst of the people I have to interact with, I hide the fact that I'm dieting and just don't eat around them.

Hahaha. Reminds me of Tom Naughton's Science for Smart people, where in a retort to a very similar statement, he jokingly said "[then] I'll be darned if I'm gonna get done in by a banana!"
