It's FRIDAY! What Are You Eating Today?
 
Morning all.

Breakfast: Two rashers of bacon, two boiled eggs and a coffee with double cream and toasted marshmallow da vinci.

Lunch: ‘No bread crayfish and avocado sandwich’ from Pret a Manger – simply crayfish, mixed leaves, avocado and ranch dressing.

Dinner: Chicken breast stuffed with Philadelphia cream cheese wrapped in prosciutto served with buttered asparagus.

Snacks: Peperami, babybel.

Plus at least two litres of water and a berocca.

B: coffee w/half and half; 2 egg "denver" omelet
D: chicken sausage (w/poblano and cheddar in it); cauliflower rice w/cilantro, tomato, green onion and jalapeno
S: pork chop(baked) w/cabbage sauteed w/bacon
Snack: cucumber and sour cream french onion dip; hard boiled eggs if hungry; lots of tea and coffee

Happy Friday! In anticipation of the inch of snow we're going to get this afternoon, DD's preschool is closing at noon. :D Sooo, I'm leaving work at 11 and am very happy about it. Don't laugh too hard at us North Carolinians and our fear of snow! :p

S: pork rinds & guacamole
D: Sausage and eggs with butter

BF: Egg Salad with bacon over lettuce; 2 cups coffee with cream

SN: cheese & pepperoni

LU: Salad: Romaine, roasted peppers, bacon, asiago cheese w/ranch dressing

DI: Steak, green beans w/almonds



Exercise: 1/2 hour hill cardio workout, sit-ups

B- coffee and some bites of leftover chicken.
L- ham and hb egg on spinach salad w/1 T ranch and drizzle of olive oil
D- pot roast, green beans. might change the veg to smashed cauliflower.
S-optional. hb egg w/mustard and salami. Clouds or a no-bake lemon cheesecake probably.

What's the best dessert you all have that's lighter in cheese and cream but still creamy? I like my old standbys (clouds, mock danish, lemon jello cheesecake), but if there's a lighter idea out there, I'd be interested.

emel that's a tough one! Most low-carb desserts are pretty heavy on cream or cream cheese.
If you're not adverse to coolwhip, maybe one of their lighter products mixed with crystal light lemonade or raspberry lemonade (powder, just mix a 1 serving tube with 1T water until it dissolves, then fold into about 2 cups of coolwhip).

I am adverse to coolwhip, but I could do your flavoring suggestion w/whipped cream and possibly freeze it. Or amend the cheesecake recipe by whipping its cream for volume. I already tried increasing the jello in the recipe, but it made the texture suffer. I will play around and report back. :)

Back to reality, Good Morning.

B either coffee at will w/ HWC in 1 cup or my usual Scrambled eggs/Bacon
L tilapia, veggie
D tilapia, salad. (I really love tilapia sauted in butter and seasoned w/ Old Bay or Cajun seasonings.)
trying to skip snacks. but I have some smoked Gouda. I have to keep that to just a bite, though.

Also take about 2 tsp All Natural PNB with my morning pills.

*shivers* Middle Tennessee is getting hammered with a couple variations of wintry precipitation nastiness. Ice and rain for all! Thankfully I am huddled under my warm cloak, sipping a mug of piping hot dark roast coffee (with 3 drops of my ever-faithful EZ-Sweetz and a single Mini Moo creamer) at my desk. ;)

It's Free Lunch Friday at work, but the menu boasts "slow-cooked pot roast." While I am indeed a huge fan of pot roast, I decided not to take the gamble on it. One person's pot roast denotes Cream of X soup and powdered mixes, while mine denotes unadulterated meaty goodness, rife with veggies and spices. I opted to bring in a can of tuna instead. HAH! Boring, I know, but hey, it's a free meal. I'm not missing out. If anything, I'm going to grab a big plate of salad greens and dump my tuna over it.

Dinner is CHICKEN GIZZARDS AND HEARTS! Well, the package I picked up at the store was labeled "gizzards and hearts (mostly gizzards)," which made me chuckle. They weren't kidding, either. I dissected the package last night and found a paltry three chicken hearts in the entire 1.25 lb package.

Anyway, I tried making these earlier this week in the pressure cooker. I cooked them for ten minutes, but they were still a little chewy. Think I'll try 15 minutes tonight. Once cooked in the pressure cooker, I take them out and put them on a lightly oiled cookie sheet with foil and broil until crispy. YUM!

Then I take the leftover delicious broth made from pressure cooking the gizzards/hearts and use it to pressure cook a quarter or so of cabbage. 4 minutes and it turns delicious, buttery, and heart-warming. <3 Mmm! Also toss a garlic clove in there; you won't regret it! Oh, and serve all that goodness on top of a huge pile (85g) of fresh spinach. Heaven.

That's my pre-workout dinner.

Post workout is 2 scoops of vanilla protein powder, mixed with 2 extra large eggs and 2 tablespoons coconut oil and a little water. Nuked until it turns into a tasty cookie. Dip cookie into some of the uncooked batter. Nom. My reward for weightlifting.

Alright, wrote a novel again. Sorry dudes.

i made a meatloaf today, and will have it with mashed cauliflower with cream cheese, yummo,,have been so hungry for this and it will make great sandwiches on my oopsies with mayo and mustard

breakfast - coffee with coconut oil & almond milk
lunch - turkey slices with mayo, swiss, and lettuce. A few mini dill pickles.
dinner - taco salad with Quorn chik'n style tenders, shredded lettuce, sour cream, avocado, grated cheese, and salsa. I cooked the tenders in coconut oil. :)

I'm baking some cheesecake muffins and will probably eat one for a snack later after they have chilled.

D: Just the liquid from a cup of clam chowder (it's from our restaurant and I know there isn't any flour in it. Just heavy cream, clams, bacon, etc. and I left all the potatoes) and prime rib :love:
