Cucumber, with peel, raw Fiber
Trying to eat more veggies with low carbs but some have fiber some dont and find this strange
So in this pic 100g of unpeeled cucumber has no fiber but 4g of Carbs ![]() In this pic peeled 100g cucumber has 2g carbs and 1g fiber ![]() How does peeled cucumber have more carbs than unpeeled? I thought leaving the peel on was the fiber?? |

Because you're not looking at it per cucumber, but per 100 grams. That means you would have more peeled cucumber. The peel has a little bit of fiber, but not that much. There is fiber in the seeds, though, and there's more weight in the seeds, I'd bet.

I would say it's that the peeled cuke has a VERY high water content which dilutes the calories, carbs, etc. There is just more FOOD there when you have the peel, which is not that high in water.
in other words, of your 100 grams, more of that is water in the peeled cukes and water has no carbs. |

That's the opposite of the nutritional values listed.
