It's FRIDAY! What Are You Eating Today?

Morning all. It's really snowing here in the UK, I'm hoping we will get sent home from work this afternoon!

Breakfast: Cold chicken mini fillets dipped in soured cream with five spice and a coffee with double cream and toasted marshmallow da vinci.

Lunch: Lettuce, tomato and cucumber with ranch dressing and a slice or two of roast beef.

Dinner: Salmon fillet pan fried in butter with lettuce, cucumber, yellow pepper and ranch dressing. Maybe a little avocado if it's ripe enough. Followed by a little double cream whipped up with coconut da vinci.

Snacks: Peperami, babybel if needed.

Plus at least two litres of water and a berocca.

Good Morning!!
Clackley, I am in love with your pooch!! Pets for him from my PJ!
My weather report is icky: 40 today and tomorrow (very weird for IL USA) then the bottom is to fall out for next week with highs in the single digits.
My food forecast is better LOL

B: (maybe brunch as I seem to be eating later) 1 roasted chix thigh or scrambled eggs w/ bacon pieces.
L: whichever of the above I did not eat for B
D: have a ribeye steak that MUST be cooked today. I will saute some crimini mushrooms for with it. I can save some of the steak for on top of a salad tomorrow.
S: Water, water, water. I keep trying to drink more. Today I am making myself drink 6-8 oz each time I get up to fill my coffee cup......which is very often.

Got about 4" of snow in Brighton, UK - very pretty - and it's still falling! As usual, the UK is grinding to a halt, but doesn't bother me, because I have nowhere to go, and the supermarket delivered this morning

Breakfast
2 pints black coffee, no sweeteners

Lunch
2 fried duck eggs
4 rashers smoked bacon

Dinner (in oven)
Aubergine Parmigiana
Lettuce, basil leaves, cherry tomatoes, Caesar dressing, Parmesan

Hello! For breakfast, had egg with cheese, bacon, coffee. Lunch - just some salami, had errands to run during lunch. Dinner is our Friday pizza nite. A sizzling pizza (have small iron skillets) Brush with olive oil, add Mama Lupe's tortilla, LC sauce, toppings and cheese. Bake at 350 till everything is sizzling and done. We love these, and the iron skillets make the tortilla nice and crispy on the bottom and not soggy. Probably a low carb margarita also...It's Friday!

Well sadly, I didn't get sent home... but it seems everyone else did cos the roads were almost empty and it was scary icy! It's pretty and Charlie loves it but apart from that, it's just too inconvenient to be enjoyable!

Ginger, how do you make the aubergine parmigiana?

B - Coffee w/ cream & splenda
L - Steamed broccoli tossed with diced ham, butter and parmesan cheese
D - I think I'm meeting up at the bar around dinner time with some friends for my buddy's birthday, so I'll probably order some buffalo wings and blue cheese dressing. YUM!

Crush a clove of garlic and chop it finely. Fry in a little olive oil for a couple of minutes, then add a tin of chopped tomatoes, some torn basil leaves and seasoning (black pepper and salt). Cook until it reduces and gets a bit thicker.

Meanwhile, slice a large aubergine/eggplant (this fed 2 of us) lengthwise, brush with olive oil, and pop under the grill (broiler) until golden, then turn it over. brush with more oil and repeat.

Put a bit of the tomato sauce in an oven proof dish, then half the aubergine slices. Throw in a handful of grated mozzarella, then repeat the layers. Top with grated Parmesan, then into a Gas Mk 6 (moderate) oven, and bake for around 25-30 mins, or until golden brown on top. Simple and very, very tasty!
