I've been on track, but just haven't really felt up to writing up my daily menus. Maybe because I'm currently in "clean out the freezer" meals mode.
Today's lunch is 1 can of chunk light tuna, 2 tbsp mayonnaise, cracked black pepper, and Red Boat Fish Sauce. Also ~100g of Kim chi from the local Asian market. Dinner is one of my crazy experimental meals that I tried on Tuesday, and after emerging as a hit with the fiancé, I intend to make again tonight. It's, um...Asian burger salad night! 2 burger patties (80/20 ground chuck), seasoned with five spice powder, kosher salt, and black pepper. Broiled until desired doneness, served alongside a BIG green spinach salad. I made a sesame seed dressing with sesame seeds, sesame oil, apple cider vinegar, liquid aminos, and a drop of EZ-sweetz. Yummy, with that weird nutty roasty sesame oil flavor and the fresh acidic bite of the apple cider vinegar. The burger goes well crumbled into the salad or eaten alongside. ~1200 calories today, 5g net carbs, 82 g protein. 92 g fat.

I used 1 part sesame oil to 2 parts vinegar of choice. This, of course, is all to taste. Then I added a squirt or two of liquid aminos. I suppose this depends on how salty you want it. |
