I use all three here too, but I use butter on my fish and veggies and almost always use butter in the microwave. I occasionally fry an egg in CO and always put a T in my coffee in the mornings. Olive oil is by the stove for the occasional fry as well. Pretty interchangeable for me - whatever seems appealing at the time.

I use extra-virgin olive oil and butter. The cheapest 16 fl oz jar of coconut oil here costs $20 (plus shipping, you just can't find it in regular stores where I live)

I use all three!

No much butter these days -- mostly for eggs and mixed with olive oil for pork chops because that's how DH likes them best.

Olive oil is what I drizzle on my veggies before roasting them. I also use it in my salad dressing.

Most of the time, I use coconut oil. I love it! I cook meat in it, stir-fry with it, put it in my coffee, and mix it with a little coconut cream for days when I'm not getting enough fat. When I don't want any trace of coconut flavor I use the expeller-pressed kind. It's wonderful stuff and gives me much more energy than I've ever had before in my life.

Right now, I'm using a lot of grease.

I baked a pan of chicken thighs, putting them on a cookie sheet above the pan. Drained off the "schmaltz" and got almost 1/2 cup of nice chicken fat. It's very mild tasting and lovely for cooking.

I slow-cooked a pork shoulder without any added fluid. Poured off the juice after. Made the broth into soup, put the fat (after it solidified on top) into a container. Use it for cooking heartier meats.

And of course, there's bacon grease. YUM
