Chili Kit Nutrition facts ?

Hello, I started back on Atkins on the 7th and am doing well so far, and feel good about it this time! Today I want to make low carb chili! I have a chili kit, it has all the spices already divided out for a pot of chili, the carb count is 12g carbs per 2 tsp and there are about 6 tsp per kit. The ingredients are Corn masa flour, chili pepper, salt, garlic, oregano, onion, paprika, cayenne pepper. Do you all think if I just leave the corn masa flour packet out that will lower the carb count to barely anything if anything? Hope I am clear, what are your thoughts? Thanks in advance :) Jessica

I don't know the answer to your question, but don't forget to add in the carbs for the canned tomatoes!

momof4 01-10-2013 11:50 AM

Thanks for the reply! I should have been more clear, I am basically asking about the spices. I know to add the tomato carb count, I am just concerned with the 12 carbs in each serving of the spices. But I am thinking that it is all in the flour, which I can just leave out. I guess I am asking if there are any known carbs in the remaining ingredients? Thanks, Jessica

Corn masa is about 11g carbs for 2T, so it would add up. If it's wick fowlers brand of kit, I think there's 2 or 3T masa in the packet?

Dottie 01-10-2013 11:55 AM

Oh and all spices have carbs. Chili powder has about 4g per tablespoon.
All the spices that are dried and ground veggies (onion powder, garlic powder) have carbs, the same as they would if you used onions, garlic, peppers, etc.

I just checked chili powder which has 4.9 carbs per Tbs(ouch!), oregano has 2.9

I think I have that kit. I make it all the time and leave out the corn masa and add some low carb thickeners...guar guar, etc. And then I leave it in the crock pot with the lid off to thicken it up a good bit. Oh, I just end up using 4 lbs of meat, no beans. That might be on the menu for this weekend. We are going to have a cold snap.

I use these packs all the time. I leave out the masa and it really does cut the carbs considerably. My nephew requests this dish every time we see him!! He loves my chili vs anyone elses. I don't use the beans that other recipes use--mine is the all meat chili. Which kit do you have? I have the "Carrol's Shelby Chili Kit". It is awesome!!! :yummy:

That's very interesting; I've never thought about the carbs in spices.

It's snowing like crazy out, and I'm making chili today. I used to chop a large onion, and use three kinds of beans. Now, I chop up 3 bell peppers, and use four pounds of meat. I add one can of tomato sauce, and one can of Rotels. I sprinkle in a little dried chopped onion, chili powder, cumin, oregano, salt and pepper.

The whole batch has around 40 grams carbs from the tomatos, and 15 net carbs from the peppers. It makes quite a few servings, so I've always figured that the carbs were pretty low.

Maumie, it's Tablespoon, not teaspoon. I checked around and that is right.
I hadn't even been counting spices !

I found that chili causes me to gain weight. You may have a different experience, but when I cook it for the family now (and I do because it is fairly healthy cooked from scratch), I usually don't have any or have a very small amount with a ton of cheese added to fill me up. I also will pick around the beans and try not to eat too many of them because of the extra carbs.

How many carbs does a premixed chili seasoning packet have? You might be better off just using a little bit of that instead. I don't have one around or I'd check for you. Also, you can make it with less tomatoes. That's what I do and I add double meat by using both ground beef and ground turkey.

shelby'snana 01-12-2013 10:57 PM

I make it without beans and don't worry too much about the spices. I also make 3-4 lbs of chili with just the one chili packet -- I add my own seasonings if needed. I've never noticed it made me gain.

Bbbut.... Spices have fiber, too. So 1tsp of chili powder has 8 calories, 1.42 g carbs and .9 g fiber .. So it's less than half a gram of carbs. A tablespoon has 24 calories, 4.1 grams of carbs and 2.6 g dietary fiber, so net carb count is 1.5grams. So it's not that bad, guys!

tymom 01-13-2013 09:02 AM

i make my own chili (red or green) and use my own spices for the most part because of the flour in the packets.

i also pull out a portion for me before i add the beans. or two.

my favorite is turkey, chicken or pork with fresh roasted green peppers and jalapeno.

we do need to be aware of the carbs in spices but i am pretty sure none of us is fat because of too much cumin or red pepper flakes.

spoiltmomof2 01-13-2013 09:20 AM

Definitely leave out the corn masa and definitely remember that the carbs in spices truly do add up:) When you are on induction you really have to watch that.

This is my favorite, too.

I also leave out the masa packet. I make it with one 14oz can of diced tomatoes and one cup of beef or chicken broth instead of more tomatoes, which helps keep the carbs a little lower.
