Pumpkin seeds

I seem to find conflicting information on pumpkin seeds.

I roasted them in coconut oil and added salt.

So- what do you think...ok to eat or not?

I had the same problem!! So many different nutrition info on them out there!

I roasted mine in butter, garlic salt and worcestershire sauce. I eat them 1/4 cup at a time and count them as 5 carbs w/ 1 gram of fiber, 9 grams of protein and 15 grams of fat.

They're perfectly natural. How could they be bad?

As with anything else, think moderation. Having a pumpkin or two worth of seeds over a couple of days isn't going to affect you significantly. Buying 50 bags may be a different story...

I'd eat them. (I'm in favor of seeds, for their nutrient-density). As "special treats" go, this one is pretty darned healthy!

I don't think there's anything wrong with pumpkin seeds. All my LC sources have always regarded them as healthy and low carb. I say, eat them and enjoy.

They are the first thing from the nuts and seeds category I reintroduced after induction, cause they are the lowest in carb in that food group. I have up to 50g (about 2 oz) a day, alway in my salad and sometimes as a snack. They don't seem to stall or trigger me (I am in a bi of a stall right now, but I'm close to goal and am experimenting with maintenance calorie levels...).

ab1ht nailed it, moderation is key. Pumpkin seeds are one of my favorite Autumn snacks, but it's easy to overdo it.

do you eat the whole thing, or crack it with your teeth and just eat the inside?
And if you just eat the inside, then what's all the outside flavor about?
(you can see, i'm not a proficient seed eater, pumpkin or sunflower )

Eat the whole thing. Cook in olive oil, either in a pan or the oven. Salt to taste.

I'm just a dumb guy who can't cook, so don't ask me for any more details. I just keep an eye on them until they're the way I like them.

My favorite, pumpkin seeds!! I was excited to find a huge bag of "In the Shell" pumpkin seeds at walmart last week and nearly threw up after only one. It tasted like it was baked in salt water, the moister the shell got from chewing the saltier it got!! Not only that but it was also dipped in a flour coating...Why do they always have to ruin stuff??!!
So last night we carved a couple huge pumpkins and I have a huge batch to roast today and I can't wait!

I like to suck the salt off the outside of the shell, crack it and eat just the seed. They take WORK to eat this way, so it's hard to overdo.

I take pumpkin seeds when I go to see a movie because it hits the same salty and crunchy buttons as popcorn for me. I buy an overpriced water to make up for the fact I'm sneaking food in (I wouldn't buy popcorn or candy anyway!).

Always say, "Bake at 350". 350 is the "default" oven setting, and it makes you sound like you know what you're talking about.

I cook pumpkin seeds by ear. When I start hearing them make little popping sounds... they're done just the way I like. (This takes ROUGHLY 10 minutes.)
