Can you use Truvia for baking? It's sweetened with Stevia Leaf Extract and Erythritol and doesn't have any effect on the GI. I've let my coworkers try it in their coffee and they can't taste the difference from sugar.

Hmmmm, I've never tried Truvia. This particular treat isn't baked, anyway. It is heated in the microwave or stovetop. Thanks for the suggestion!

I kept seeing people talk about it, and finally came across the recipe:
Warm Chocolate Pudding Put 2 eggs in a blender, add 1 tsp. vanilla extract, 3 splenda, 1 tbsp. cocoa and blend. Meanwhile, put 2 tbsp. EVCO in bowl and nuke for 1 minute. Add to egg mixture and blend again for a minute. Transfer to mug/small bowl and nuke for abou 30 seconds, just enough to warm. It is incredible; thick, creamy, warm, just like homemade chocolate pudding right off the stove but better. It's the EVCO that does the trick. I used a pan on the stove and whisked it constantly. I'm sure it wasn't as smooth as described above, but it was alot easier.

I use truvia which is the commercial erythritol/stevia mix ... I get them at supermarket in baking.. You can make your own "truvia" for pennies on the dollar if you have granular erythritol and pure stevia extract.
But for convenience i just throw in three packets.. Fabulous pudding.. I mean.. If i could only have one treat..this would be it J |

I'm dying to try this recipe but I can't get past the feeling that it would be basically be a bowl of raw egg. Or does it cook somehow?

You cook it in micro. I put in for 30 seconds..stir..then 10 more..
Sometimes there are bits of cooked egg but i like that.. You can run back through the blender and then eat or put in fridge for a bit J |

I tryed this today and liked it all but the egg pieces in the mixture. Is there a way not to have the egg that way? I did use a blender, I do not like the cooked egg in the middle but liked the rest? ANY Ideas??

My wife and I love this treat. I found there's really no need to blend the oil in after everything else has already been blended; in fact, i've found that if i coat the bottom (blade, etc.) with the oil first, it makes cleanup a lot easier. So yeah, just blend it all together and save time.
To avoid clumping: 20 seconds; stir; 10 seconds; stir; 5-7 seconds & stir well, repeating as needed until the pudding is warm enough for you, or just starting to clump. -Matt |

Matt has right idea
I think slow and steady wins this race..i dont mind the small clumps but sometimes i do put the mixture back in the bullet for a qiuck blend to get those clumps
Ive yet to have it warm..i just love it cold J |

I have had it broought to my attention by my scales that I have been using the wrong Stevia. MINE has sugar as the first ingred. Be careful. I have gained. I am doing a new Induction. I have been eating too many SF products.
Just wanted to drop in.......... :-) |

The Stevia I was using was Stevia in the RAW :-( Yep we must be more aware. My DH said didn't you read the ingred. HUMP! Me got a little like ....no i am a idiot....MEN..sorry guys (((((hugs)))))) We been together 40 something...he said that 40 years ago me would have probaly cried. Well don't really know what I would have done. It was like hearing that dreaded" I told you so. ![]() ![]() ![]() |

I would say it was more of a flan texture than a pudding. One thing I did not like is that the coconut oil leeches out of the pudding as time goes on. As I ate, coconut oil would leech out and I would have to get up and drain the oil into a ramekin. By the time I finished the mug, I had a ramekin that was half full of used coconut oil. Is there an ingredient I can add so that the pudding stays together rather than separating like that? It was kinda gross . . .
