It's TUESDAY! What Are You Eating Today?
Morning all.
Brekky: Atkins Advantage mocha shake and a strong black iced coffee with praline Da Vinci. Lunch: Salmon fillet pan-fried in butter with lettuce, cherry tomatoes, mayo and a small handful of pistachios. Dinner: Pulled pork with sugar-free honey barbeque sauce and buttery spinach. Snacks if needed: Babybel, peperami. Plus lots of water and maybe a diet Vimto or cream soda. |

Today my mom is coming to visit! We're going to go on a lunch date at Jersey Mike's Subs. I've never had them, but after a cursory glance at their website, they serve "Subs in a Tub," which tickled me to no end. Therefore, I am going to have a Turkey & Provolone Sub in a Tub, extra turkey of course.
And for dinner, I'm making homemade double downs. AW YEAH. Baked and seasoned chicken breasts for the buns--bacon, cheese, and mayo for the innards. I'm looking forward to this little experiment. 1200 sumthin' calories, 7-10 net carbs depending on what's actually in my Sub in a Tub today. YAY

I seem to be caught in involuntary maintenance! Oh well, B-3 boiled eggs with butter, 3 bacon, coffee L-salmon salad or egg salad, roasted seaweed D-chicken thighs, salt/vinegar marinated cucumbers Sn-pepper jack cheese No HWC or nuts! |

I am tinkering with my workout time(s) and my metformin schedule. I take metformin twice a day and get dizzy while working out if I take it with breakfast and workout immediately after.
So, today I am going to try taking an early lunch break and going to workout then. I will have taken the metformin with breakfast (like what my MD told me to do) but will have had an extra snack in the meantime. Yesterday, I didn't take it with breakfast and went to the gym like usual. That was fine except that I couldn't take it *after* and ended up waiting till lunch. Then, I couldn't take the evening dose... ugh. B: coffee + 1/2&1/2), 1 oz almonds, 1/2 cup blueberries S (pre-workout): cheese stick L (post-workout): leftover Linda Sue's spinach lasagna (a very small piece... not much is left! )D: hot italian turkey sausage, 1 cup grn beans S: ? maybe an atkins bar or some full-fat greek yogurt (plain or with a TBS natural PB mixed in) |

I'm dealing with a whacked out thyroid and anemia right now...so I'm not really moving much. The word of the day is "Exhaustion". Starting a new thyroid med tomorrow and getting an iron infusion IV done in the next few weeks. B: coffee w/hwc and 1 tbsp coconut oil, chocolate OMM w/kerrygold and crunchy almond butter w/flax L: 3 organic grass-fed beef hotdogs w/mustard, 1 dark 86% chocolate square D: Spicy sausage stew (spicy sausage, leeks, onion, garlic, carrots, kale, chicken broth) Dessert: decaf coffee w/hwc

We have a Jersey Mike's coming not too far from my house... sounds like a wonderful LC option!! I get kind of sick of the Jimmy John's un-wiches --- although they are delish!!!

So far:
S: Strawberries & blueberries with HWC; 1 oz. roasted/salted pepitas B: 3 eggs whipped with HWC, cooked in 1 TBS. butter with fresh thyme & parsley; 4 slices bacon; few cherry tomatoes with feta cheese, drizzeled with EVOO (didn't finish the whole portion, will probably eat later). S: 1 oz. BBQ pork rinds. Sipping all day on one cup of coffee filled half-way with half-and-half with 2 splenda. |

By the way...Jersey Mike's Sub in a Tub was AMAZING!!!!!!
