Bunny's pudding recipes!

Warm Chocolate Pudding
Put 2 eggs in a blender, add 1 tsp. vanilla extract, 3 splenda, 1 tbsp. cocoa and blend. Meanwhile, put 2 tbsp. EVCO in bowl and nuke for 1 minute. Add to egg mixture and blend again for a minute. Transfer to mug/small bowl and nuke for abou 30 seconds, just enough to warm. It is incredible; thick, creamy, warm, just like homemade chocolate pudding right off the stove but better. It's the EVCO that does the trick.

****I use 3 packets of truvia and usually don't add vanilla
I could kiss you!! LOL! I tried this for the first time tonight, using the Truvia and vanilla....IT'S INCREDIBLE!! I'm not even a big fan of regular chocolate pudding, but this stuff is awesome!

Thank you soooo very much for posting this! What an easy and incredibly delicious way to get a couple eggs, coconut oil, and rich in antioxidant cocoa powder into a diet! Nourishing and so healthy!

I usually eat it off the spoon or in my coffee...but...

I really didn't feel like doing groceries today or cooking and just finished drinking a coconut-vanilla protein shake. I used ice cubes, 2 scoops vanilla protein powder, 1 cup coconut milk (the kind from the tetra pack like soy or almond milk...3g of carbs in 1 cup... not the kind from the can) and about 2 tbsp of coconut oil then whizzed in the magic bullet.

The coconut oil was still pretty solid but it sort of came out like tiny coconut chips in a yummy, frozen blended drink. It was SO good and made me feel terrific.

I know coconut milk is not technically allowed on induction - I'm kind of concerned about a stall - but at the same time it was still very low in carbs

I will have try the pudding. I have been low carbing for two years but I haven't done the coconut oil thing because I still can't wrap my head around intentionally adding calories and fat. I feel like I get enough without really trying.

Did you melt the oil all the way? Not sure what the solids where???

I heat it for 30 seconds and stir. Usually it is not hot enough for me in my microwave, so I heat it in 6 second intervals making sure to stir after each 6 seconds. I like mine thick, but not when the egg starts to scramble.

I need to stir next time...I just finished making one for today and it had the egg scramble starting, just like yesterday. Still delicious, but I'd prefer it to not have those LOL

These are so good! As satisfying as one is, it's hard to not want to make a second serving!

My microwave is pretty strong, maybe I should've done 20 secs and then stirred, and so on. Was definitely great ! will make again.

The only thing I don't like is having to clean the blender each time! I wish I could make up like a weeks worth and then heat each serving daily!

I've had one of those, but it broke within six months of using it daily. I think I will check out some of the other similar offerings....sure would be easier to clean!

WOW!!!! Okay, so I was sitting in panera bread, trying to study for my final, which is tomorrow, and they start baking chocolate chip cookies. I grit my teeth, take a study break and look on LCF. I see this recipe. I promptly get up, leave and go buy some eggs. I botched the first batch by letting it cook too long in the microwave, but the second.... so wonderful. By the time I finished it, I was like, yeah, I won't be eating anything for a while... so deliciously full! Hello breakfast or evening snack!! This will be the first finals week I will make it through without binging in two years!!!!! I am thrilled and so very thankful to annmarie for asking the question and to jandjsmom for answering with this recipe!!! Can you tell I'm excited? Maybe the scale will start sliding on down for me again soon as well!

I don't like it in my coffee now...it's just too oily. I just eat it by the spoonful sometimes. I also cook meats in it. I'm going to start melting some with some lime juice to put over a salad.

I let mine be kind of thin, the second time. I think it helps to leave the mixture in the blender for a full minute, but then only microwave for 15 seconds. My first one was not so great, but the second one was worth it! I'm so full I may never eat again!

Try 20 secoonds. Anything over 20 in my microwave and it starts to get chunky. Mine is not like a thick pudding but still wonderful. Good Luck!

I just throw a teaspoon of it into the frying pan a few times a week, when I'm frying up some chicken strips or zucchini or whatever. I mainly use olive oil and sunflower oil, but I find that the impact of just that small dose has been profound.

I've tried a few of the bark and fudge recipes, and they're nice enough, but not anything I really use regularly.

You have not idea how excited I was to try this recipe, I made this morning I didn't have all the right ingredients, I did the evco, eggs, didn't have the cocoa powder, put a little bit of cocoa nibs, a 1/4 tbs of coconut shavings, a bit a cinnamon and stevia, and it tasted right out the microwave and I literary was like a 5 year old with a cup of chocolate frosting, thank you, I can't wait to try it with all the right ingredients Thanks! Oh is the Warm Chocolate Pudding safe in the introduction?

Hey Thinagain! Not sure if it is induction safe. I never have done induction by the book but I'm sure someone else will come along and can help you!

Glad you enjoyed it! I think you will love it once you have all the ingredients!
