It's WEDNESDAY! What Are You Eating Today?

Morning all.

Brekky: Three rashers of bacon, two boiled eggs and a coffee with cream and caramel Da Vinci.

Lunch: Lettuce, cucumber, tomatoes, orange pepper, ham and mayo.

Dinner: Cajun spiced chicken breast with baked cheesy cauliflower and soured cream.

Snacks: Celery stick stuffed with cream cheese and either a peperami or a cheesestring.

Plus at least 2 litres of water.

Breakfast- Egg salad on a bed of spinach with some 3 slices of bacon

Lunch- Pot Roast w/some cooked onions/tomaotes, sour cream on top

Dinner-Same as breakfast

Gallon on water

Maybe some jello if needed

Start Date: Seriously committed in January 2011 [at 200 lbs.]
Lunch for today: 120 g of flat-leaf spinach, sprinkled with Kroger FANCY! Mexican shredded cheese. Topped with a can of Aldi chunk light tuna, made delicious with 3 tbsp Duke's mayonnaise

Dinner: Leftover pulled pork bowl, mixed with 100g guacamole, 2 tbsp sour cream...mmmm. It's so decadent.

Macros: 31.4% Protein / 4.58% Carbs / 64.02% Fat - 1265 calories

Gibbs - No not at all!! I understand, my fiance used to work 7pm til 7am shifts, he does not miss them!

Limetwist - How do you make the pulled pork? I've had it in restaurants before but I wouldn't know how to make it at home. Sounds delish with the guacamole and soured cream.

Cathy - Yes time does fly, I can't believe he will be 2 later this year! It's just so much fun seeing him grow up and develop into a proper little person!

I make it low and slow in the oven. For 6-8 lbs. of pork, I cook at the lowest my oven will go (200 F) for about 12 hours. Rub it beforehand with a mixture of your choice. I like salt, pepper, and garlic powder. I don't add ANY liquid, save for a dash of liquid smoke. Even then, that's not necessary. Cook for 12 hours, finish off under the broiler to make any fat crispy and delicious. It should fall apart on its own by then. I don't eat mine with any sauce because I think it's that good on its own.

I forgot to bring breakfast to work, so I don't know what I'm going to do for breakfast....my high fiber maple and brown sugar oatmeal is staring me down, but I'm sure that's not induction friendly.

Snack - Cheese or shake
Lunch - Cauliflower mashed potatoes and pot roast
Snack - only if I'm hungry
Dinner - Leafy green salad with chicken and blue cheese

BKFST: zilch. LUNCH: well toasted karbkrunchers bagel (6-7 gr net)tuna salad covered by a thin slice of tomato on 1/2, and chicken salad also covered by a thin slice of tomato. always toast your low carb starches. the CRUNCH factor is so important. also, it enhances the flavor of the bread, bagel, pita or whatever. The fiber also adds a satiety factor allowing me to consume less critter and save $$$. DINNER: tonight will be a carb free meal, whatever it is that I DO eat. total carbs for the day is under 10. I really want to eat a snack right now but A) I know that I'm not actually hungry, just bored and B) I don't have any LC snack food and don't want to tempt myself by going to the shop downstairs. I think they have string cheese down there, but I may get waylaid by the candy

L: Cold steak with horseradish. More tea w/ hh.

bfast @ 6:15 am! Omg, I never eat that early but my man was on a mission and apparently it served me well because I wasn't hungry nearly all day! experiment in the making?
had 2 slices applewood smoked bacon, and two sunny side up eggs(cooked perfectly! He rocks in the kitchen!) with coffee w/stevia
Lunch, if you can call it that, around 3:30pm had four little forkfuls of tuna salad
Dinner, had 3 hard boiled eggs with a little bit of mayo and tabasco
plus about 2 or 3 vodka/diets coming up. TOM on top of a cold is killing me
