Eating on the Go

Hi Carb Friends,

I was wondering what you guys eat when you don't have time to stop and cook; breakfast, lunch, dinner, snacks, and drinks. I was recently diagnosed with Type 2 diabetes and I'm having a hard time eating healthy because I don't have time to cook; not mention I've never been much of a cook.

My dietitian put me on 165 carbs a day; no more than 50 carbs per meal. I don't have to eat 50 carbs every time I eat I just can't go over 50. Any suggestions would be greatly appreciated. Thank you.

If the high amount of sodium is acceptable, you can get by on jerky and nuts . . supplemented with a multi-vitamin.

Turkey Niblets

One vegetable dipping sauce option is blended cans of diced tomatoes and cut green beans.

they sell mini pepperoni in single serving packets in the deli section now. Hard Boiled Eggs are another staple in my lunch bag. I also eat an entire cucumber a day. I slice it up and eat it all day long. I also cut luncheon ham and turkey up and make my own lunchables with cucumber, cheese, and ham. Mmm. Also, they sell single serving size bags of nuts. I keep one in my purse for emergencies. The goal is to keep you blood sugar even. Did the dr suggest never eating a carb alone? You should always add a protein to it so that it takes longer to digest.

I'm the laziest eater, so I'm always on the lookout for casual or convenience foods.

Breakfast is probably hardest because all the easy options are bready or sweet. If I don't have time to make proper bacon and eggs I'll probably skip it, or at least have a plain yogurt with cinnamon and berries.

For lunch or dinner, my favorite is a taco salad (minus the tortilla), preferably at a place where you can watch them assemble it and pick each ingredient. Also, more sandwich and burger places are offering lettuce wraps. If I'm at an Asian restaurant with a hibachi grill, I use a pile of bean sprouts in place of noodles then add sliced meat and every veggie on top.

Convenience stores are minefields for nutrition, but if I find myself trapped in one there is always jerky, nuts, veggie sticks and dip, (boring) cheese, pork rinds, and diet soda. Though beware the "honey" or "bbq" varieties that use lots of sugar.

You can also purchase unsalted versions of nuts. I buy brazil nuts in the baking aisle.

I work 2 full time jobs, and up until December, was a full time student. The only days I eat at home are..........Friday night, Saturday night and Sunday.

I have found I *have* to do some planning and cooking to keep my diet healthy and in budget.

Burgers that I cook on Sunday help a lot. I cook enough for the weekdays on Sunday. I buy romaine, red onion, and tomato and, with a side of ranch dressing, have a burger salad.

I buy chicken on sale and make chicken salad with onions, celery, hb eggs, and red, green, yellow peppers. (I try to incorporate veggies as often as I can).

I shop late at night, and grab discounted already cut up veggies (usually broc, celery, tomatoes, cauliflower. I give the carrots to the kids and pack the rest into individual bags of mixed veggies. I buy the 100 packs of guacamole (not because I am worried about calories, but because they work for my needs). I mix hard boiled eggs (often that I have purchased instead of made) with the guacamole for "devilled" eggs, and use the rest of the guacamole for the raw veggies.

This week, I got turkey burgers on sale, sliced mushrooms on sale. I cooked them all Sunday, put them in individual containers, got sliced swiss cheese and I have a major lunch.

I buy skewers of veggies at Kroger (on sale) and take the veggies off the skewer, putting them into zipper bags with spices and olive oil. One of my jobs has a toaster oven, and I cook them in their.

Last week, I got a brisket at Sams that was already cooked, yummy, and I ate it all week!

I haven't had any of Linda Sue's tuna muffins recently, so I am thinking of a batch of them.

Crack slaw also cooks, travels, and reheats well.

I get veggies and put them in containers with butter to grab each day. One of the stores here seasons green beans, brussels sprouts, and asparagus, wraps them, and sells them. I get one of each, combine them into 4-5 individual containers, add butter, and grab one each day.

Good "out" Places I've found:

Freebirds (the Freedom salad, customized)
Jason's Deli (salad bar, sometimes with a side of tuna)
Fuddruckers (no bun, of course)
Wings (these are my treat)
Subway salads

Hard boiled eggs
Canned chicken for chicken salad
Tuna
Microwave bacon
Deli meats
Cheese sticks
Nuts

If you do fast food it's pretty easy to just take the bun off a burger/chicken sanwhich and add a side salad. My SO does this a lot. She also carries LC tortillas and just inserts the sandwich filling into the tortilla.

I eat at El Pollo Loco when I don't feel like cooking.

If u share ur preferences people can tailor their responses to your needs. I don't want to be suggesting tuna if u don't do seafood.
