Dumb Question

Ok - Baked chicken last night and put in fridge. Next day you have two substances: whiteish looking grease and jelly like substance. Which should we be eating for more fat in diet?

The white hard stuff is the fat. The jelly like substance is the collegen from the bones. Both are good for you! Both will revert back to liquids when you reheat the chicken.
