Almond Milk

I've always loved almond milk, even before I went LC. Going to pick some up at the store after work (Publix).. what is your favorite kind of Almond Milk and what are your favorite low carb recipes using it?

I love Blue Diamond unsweetened vanilla almond milk. It's really good. I tried Trader Joe's brand and it was vile.

You can use it in place of milk or cream in any recipe, or when a recipe calls for coconut milk.

I like to drink it with just a little bit of HWC (the same amount I'd put in a cup of coffee) to give it an even creamier taste and consistency. YUM! I was always a big milk drinker, so this fits the bill. When I low carbed 11 years ago, I missed milk the most, and could not stand soy milk.

I use blue diamond unsweetened vanilla almond milk too. I recently tried silk almond milk but I concluded I prefer blue diamond seems a bit thicker and I prefer the flavor. Silk almond milk seemed to separate ever so slightly in my coffee. Not a fan of soy milk either, weird I love tofu.

I vote also for the unsweetened vanilla Blue Diamond almond milk. My favorite use is in smoothies I make w/protein powder, some full fat plain yogurt, vanilla SF syrup, and either cocoa power or frozen strawberries, plus ice, all blended to a creamy goodness in my blender. Almond milk also makes a very nice hot chocolate when blended on the stove w/cocoa powder and SF substitute of choice.

I like it, though I can't tell the difference between Trader Joe's and Blue Diamond (except TJ's is cheaper). I use cottage cheese instead of yogurt in my smoothies, to save on carbs. I make my current favorite with 1 c almond milk, 1/2 c cottage cheese (3g carbs), and 3 cubes of frozen mashed pumpkin (3/8 c ~ 5g net carbs), plus 2 tbsp sf vanilla syrup and some cinnamon and nutmeg.

It also makes a good dessert drink with just a teaspoon of sf syrup and the spices. I imagine the seasonal pumpkin pie-flavored sf syrup Davinci's (& Torani's?) sell would work well.

I buy either Blue Diamond unsweetened vanilla or the Trader Joe's brand unsweetened vanilla (which is $1 cheaper unless the Blue Diamond is on sale). I use my almond milk in protein shakes, and by the time I put my other shake ingredients in, I can't taste a difference between the two.

Silk Almond Milk - Unsweetened

By a million miles! The Blue Diamond just isn't that good to me. Not to mention the Silk only has 1 carb per serving and 1 gram of fiber. Only 35 calories as well, not to mention it is so creamy and smooth! It feels sinful drinking it with a packet of splenda and a dash of cinnamon.

I'm confused.. I found the Unsweetened Vanilla and Plain BD Almond Milk in the grocery store today.. but the label said 9g of carbs per serving for the vanilla and 8g for the plain.. what the heck?

I love adding Silk Unsweetened Almond Milk to my protein shakes. It makes them so creamy and tasty. I never thought I would like anything other than regular whole milk, but I love it.

Unsweetened only has 1g carbs, it must have been the regular you saw. The label for unsweetened has a red banner on the top (I think) that says "unsweetened".

It has the calorie count on the front of the carton 40 calories that's what I look for the unsweetened one. It's 1 carb.

I use Silk, because that's what my store carries. I haven't seen Blue Diamond yet, but I'll go look for it. The fresh stuff in the dairy case is SO much better than the old aseptic shelf-pack stuff, and I even liked that!

I use it primarily in protein shakes, though I will occasionally make myself a glass of chocolate milk if I badly want something sweet.

Oh oh.. I think you might have picked up the one that is sweetened. That would account for those carbs.

Make sure your carton states UNSWEETENED.

Nice. I just so happen to have a nice bottle around to put it in too. Think I'll start with vanilla, since I definitely have ti on hand. Or maybe just adding da vinci syrup.

I drink a glass in the morning and a glass at night religiously as it's loaded with calcium!

1 cup BD unsweetened Almond Milk
1 tbsp Heavy Whipping Cream
1 tsp instant coffee
2 tsp Splenda
several shakes cinnamon

I microwave the Almond milk for 1:15, add all the dry ingredients and mix well, then add the HWC last. It's delish! Sometimes I'll replace the cin. with pumpkin pie spice and add two tablespoons of canned pumpkin for a yummy pumpkin latte.

Do you find that the refrigerated almond milk breaks when you microwave it? I used to have that problem with the aseptic almond milk and haven't tried it with the new stuff. I'd love it if I could make it work in my coffee.

I use Silk Almond milk as the basis of pudding with 1 TB psyllium or chia seed, 2 glucomannan capsules, 1 TB dark cocoa powder and 1 oz. Torani. Blend it up well and let it sit in the fridge for 1/2 hour - gets very thick, and it will give you a good fiber boost.

I have Silk Unsweetened PureAlmond Original. 35 calories. 1g carb and 1 g fiber. Does that mean 0 actual carbs? I have always been confused about the net carb thing.

Also i would love to find a recipe that i can have in place of water that is NOT a protein shake/meal replacement thing. Just a drink i can enjoy... That involves chocolate.

I LOVE Blue Diamond Unsweetened Vanilla almond milk. I used to use it in my coffee until I started using HWC, and I also use it for a great Iced Coffee.

I have recently starting purchasing the Blue Diamond almond/coconut milk blend and love it with some SF DaVinci or Torani. I also use it if a recipe calls for milk.

Yes, it's 0 net carbs. You can subtract any fiber grams from the total carb grams to get the net grams. Some people don't subtract the fiber out, so as to not go over their daily allotment, but I do.

I found some Yoo-Hoo drink packets (you know, like the Crystal Light packets) at one grocery store near the hot chocolate. It was ok in the almond milk but not as good as the original. You could also try diet Swiss Miss hot chocolate (make sure it's the diet one for the lowest carb count, not the no sugar added box). Or use unsweetened cocoa powder, splash of vanilla, a dash of salt, and sweetener of your choice to make your own hot chocolate.... add a little hwc for richness.

I also love Blue Diamond unsweetened vanilla!

One of my favorite recipes is: 1 cup almond milk 2-3 tbsp chia seeds, packet of stevia, dash or two of cinnamon and nutmeg, stir, let sit over night. Turns into a nice thick pudding.

Or 1/2 cup canned pumpkin (not pumpkin pie) with a packet of stevia, cinnamon and almond milk poured over the top. So yummy! Taste like pumpkin ice cream.

I use whichever is on sale. I love to froth it and put on top old a shot of espresso. Yum. I don't find it thick enough to use as creamer. I use it in any recipe calling for milk.
