Ah yes. I wish I had a dollar for eveyone who discovers how good these things can be. I use a mixture of golden flax meal, pecan meal and almond meal for mine. Love them with SF jam and may be the reason I don't miss sweets.

In the winter months and when I have time I bake them in the oven............OH HEAVEN!!! :love:

I put almonds in the coffee grinder to make my almond meal, leave some chunks in there and it is so delish! I add lots of cinnamon, and vanilla. This is one of my favorite things low carb to eat, satisfies my occasional hunger for bread.

Great tips on Almond meal...the Flax ones always left me bloated and while I LOVED the texture and versatility, they were not my friend.

I just made this wonderful recipe that one of you posted here previously! And it is a total hit at home!!!!!! Breakfast muffins3 tbsp ground flax one egg one ounce cream cheese 1/2 tsp baking powder a bit of Splenda and a couple of shakes of cinnamon. Beat together and microwave 2 minutes in a pam-sprayed ramekin. Perfect with butter or a schmear of marscapone... |

Here's my trick:
I got some little wide mouthed canning jars--1/2 pint size. I use coconut oil to grease these and then put enough dry ingredients for a single serving in each jar, then put a lid on. Now, on busy mornings, I just have to add 1 tsp of coconut oil and an egg to mix in one of these jars and pop it in the microwave--quick and easy. CAUTION: The jar gets very hot making these in the microwave. Handle with CARE and an oven mitt!!!!! My other favorite container for a single serving made in the microwave is a Pyrex 1 cup measuring cup. |

I have an older micro and cook mine longer. I probably would anyway because I don't like them to be too wet on the bottom. You just have to try different times to see what works best in yours. Anywhere from 1 1/2 min to 2 min seems to be the rule. If you add liquids to the basic recipe like this morning for instance, I added a TBS of SF Raspberry syrup, you have to cook it just a tad longer. Here's my recipe:
1/4 cup of any nut or seed flours like flax, pecan, almond, coconut etc.I mix Flax and pecan a lot. Add to that, 1/4 to 1/2 tsp baking powder,,,mix very well 2 TBS oil.....mix that in 1 egg...beat really well into mix, you don't want any egg white strings.... Pinch of salt...I think it taste a little flat without it Now the fun part....add some type of flavoring...I like banana, caramel, coconut,.... I cook mine in the same bowl I mix it in. It is just a small, square cereal bowl. When it is done, I take it out and cut into little squares and top with peanut butter or cream cheese, or SF Jam, or just plain butter..... Don't forget you can add savory things like dried tomato, spices like garlic powder, or herbs like dried basil etc. I do moisten any dried things first though because there is not a lot of moisture in the muffins. You can put cheese on top and pop them under the broiler too. Or pour your batter into a flat rectangular plate and cook them thin and flat....cut in half and make a sandwich. :) Hope this info helps someone. |

Your're welcome email......I do use more oil than most and some don't use oil at all but use butter. I just wanted something that I didn't have to melt first and wait for it to cool, so I use oil.

does anyone have a recipe that you could add a little pumpkin, or would i just add in a few teaspoons and some cinnamon to the original recipe and bake them as beeb does??...
