New recipe:
New Dessert: Burnt Butter Mock Danish by Healed01: 1 stick of unsalted butter (1/2cup); browned 1/4 cup of granulated splenda (a must); added after browning 1/2 stick of cream cheese; softened Put all in a blender with 2 eggs and blend until smooth. Pour in a dish and microwave for 3 minutes or until center is somewhat done. |

I make up a larger batch of these (usually enough for 8-10), adding variations here and there, and cook them all in my waffle maker. Eat one, then freeze the rest in a freezer baggie. The whole week, all I have to do is take one out of the freezer and pop into the toaster! It is awesome for those times when you just don't want to get all the ingredients out and measure and mix...anything to make mornings easier, and it keeps me out of the kid's cereal and donuts because I already have an option available that is quick and easy.

I haven't made too many MIMs because I just don't care for the flax taste very much, so yesterday I made one and used half almond meal and half coconut flour, added some sugar free choc chips, and added some sweetened cream cheese on top once done. OMG it tasted almost like a frosted cupcake! Yum!!
One thing I noticed though, I think the coconut flour sucks up a lot of moisture and I think next time I will add a little extra liquid of some sort. |

I'm having ALL kinds of fun with these....trying different "add-ins" to them. I'm making burgers today and I'm going to add garlic powder, onion powder and some grated parm cheese to it and see how I like that.
I've basically been eating one of these a day for the last week or so and my weight loss pattern seems to be changing (for the better). I've had a pattern of only losing weight every fourth week...I would lose to a new low, then bounce back up to the old low and stay there until exactly four weeks later when I would then lose another couple of pounds, repeat, repeat, repeat. I added these in and my weight loss is starting again. Not sure whether it's the extra calories these are adding or what but I'll take it! And my digestive tract seems much happier too! My body temperature is also higher. It's usually 97.3 but it's jumped up to 98.6...rather strange. |
